Substitute for whitefish in gefilte fish recipe

The article about Chicago mentioned that Lake Superior is frozen over. I just would have thought that I would have been able to find more than one article...Don't let the fact that I'm making the fish from scratch (save for the boning and grinding) fool you into thinking I'm concerned about kashruth, but thanks for raising the issue--very interesting, I didn't even think about that. I'll be cooking the fish in the same 20-quart pot in which my mother made her tomato sauce (with sausage and pieces of pork in it) and boiled lobsters every now and again.

Substitute for whitefish in gefilte fish recipe

Okay, I just went to order whitefish, pike and carp for gefilte fish (mom's "recipe") and was told by my fishmonger that here in NYC, it's virtually impossible to get whitefish this year due to the obscenely cold winter resulting in whatever lake they get the fish from still being frozen over. My guess is that if I searched high and low for the next two days, or went to a high-end Manhattan fish store, I might get lucky and someone might have it, but I don't have the time to do that.

Two questions:
(1) Has anyone else been told this story about a whitefish shortage? I've only found one story about it on the internet and it's about Chicago, not NYC.
(2) What's a good substitute for whitefish? I'm not a big fish-eater, so I really don't know what's at least passingly similar to whitefish in taste. The fishmonger says people are using striped bass as a substitute.

How much batter to put in Nordicware cornucopia mold?

Last year, I bought a Nordicware cornucopia baking pan at an outlet store when I saw that it was marked down to $5, figuring that it would be fun to use for cornbread at Thanksgiving. Putting aside for the moment what recipe to use ( I personally like the slightly gritty type of cornbread, with a little sweetness to it) , I'm not sure of either how much batter to put in the pan or how long to bake it. I intend to measure the volume of the pan by filling it with water to check the volume, but I don't know what proportion of the volume of the pan to fill with batter. And how do I prevent the batter from baking unevenly in this oddly shaped pan with varying depths?

I was told months ago by someone at Plainview that Douglaston would be next after Stamford. Last week, someone at Red Hook said UES is next. My sister lives right near Douglaston and said she saw some activity there and an open door today and I read an article in a local paper saying that electrical work was actually done in January. So maybe it will be this year...

Glatt kosher restaurants in Forest Hills, Rego Park and Kew Garden Hills, NY

I posted this on the Outer Boroughs board and it was suggested by someone there that I post it here as well. An Orthodox client from out of the country wants to take a colleague, my colleague's wife and me out to dinner this Thursday evening, somewhere in the local area. There will be 6 people altogether. I know there are restaurants on Queens Boulevard and on 108th Street, but have never eaten in any of them and don't know which are Glatt kosher and have decent food. I haven't been given any guidance as to type of food or price range, so I can't include that info here. Thanks for any suggestions.

Cannelle?

Ratings don't always have to do with cleanliness or food handling per se. It could be that a sink was a few inches too far away from where it is supposed to be, or something along those lines. I heard on the radio that there is talk of putting some sort of scannable barcode on the signs, so people could scan the code with their smartphones to see the basis of the downgraded letter.

Fairway is coming!!

My sister, who lives right near the location, was there on Saturday and there were signs posted that that was the last day and the Waldbaum's circular was not being honored. I was at the Plainview location on Saturday evening and was told by a manager that the Douglaston store was supposed to open this year, but with all of the zoning issues last year, combinded with the construction involved in expanding the size of the store, the opening had to be delayed and the store will not open until 2011 (I hope the early part!). Pelham opens in April and Stamford opens later this year.

Fairway coming to Queens?

Update - The Waldbaum's operating at the upcoming Fairway location in Douglaston closed this past Saturday. I was told by one of the managers at the Plainview location that the Douglaston store will not be opening until 2011, in good part due to delays relating to now-resolved zoning issues. The plan had been for Douglaston to open early this year, followed by Pelham, then Stamford, but instead, it's Pelham in April, Stamford later in the year and then Douglaston.

"Mama" has died

Nancy De Benedittis, the matriarch of the family that runs Mama's Deli and also Leo's Latticini, in Corona, has passed away, at age 90. I always got a kick out of going in there and seeing her sitting at her little table in the corner, surveying everything going on in the deli. It was wonderful how her daughters included her in what was going on, even her later years. RIP, Mama.

Southern Fried Chicken on Long Island

Had it today and it was great!

Not to miss on Long Island, anything goes

I had dinner at LL Dent a few months ago. Unfortunately, I don't remember what I had, but I enjoyed it, as did the other 2 people I went with. One of the owners came and sat with us for a little while and urged us to return for Sunday brunch, which we did today and it was great. It's buffet, but not self-serve. The menu was a little limited, but more than sufficient and once again the food was good. From what I can remember, omlettes made to order, belgian waffles, bacon, sausages (pork or turkey), biscuits and gravy, grits, fried chicken (really good, crunchy and not greasy), BBQ chicken, pork chops, fried whiting, mac and cheese, some pasta and chicken dish that I did not try (my sister did and liked it), meatballs and pasta (not bad, but least favorite of what I tried), collard greens (not overly bitter), mixed veggies, rice, red beans, peach cobbler, tiramisu (actually not really, as not coffee flavored, but almond flavored), baklavah, chocolate cake and yellow cake. Coffee, tea and fountain soda included. $18.75. Very warm and friendly atmosphere.

I need a watermelon in Forest Hills, Queens

My sister has asked me to make a watermelon boat and fill it with fruit salad, for her daughter's first birthday party on August 9. I used to make them 1x or 2x a year for big summer gatherings. The last few times I've tried to find one of those big, long ones, I haven't been able to. It seems the market is really going toward the more round seedless melons.

I checked Trade Fair on Queens Blvd., Natural and C-Town on Austin Street, to no avail. I haven't checked any of the big supermarkets, like Stop & Shop, Waldbaum's or Pathmark yet, nor have I checked any other produce places. I recall last year seeing a guy with a truck parked on 20th Avenue, near BJ's selling them. But I don't recall if he's around this year and something makes me a little nervous buying like that.

I really don't need the melon until over a week from now, but I thought that maybe someone might have seen them around recently. It will make more work for me making that fancy melon basket rather than just cutting up chunks of fruit, but my positively adorable niece, who my sister thinks sometimes looks like me, is worth it.

What was Newsday thinking (LI restaurants)?

Another vote for it stinks, especially the dark background. It almost has a rag quality to it now, as if the most sensational stuff is smack in your face and you have to really search hard for real news. A shame.

Andel's in Roslyn or Ben's in Greenvale for deli, though Ben's is probably slightly more reasonably-priced. Bruce's in Great Neck for cookies. Unfortunately, I know they all deliver.

Butera's is on Jericho Turnpike in Woodbury. Not 100% traditional, red-sauce Italian, but I enjoyed it when I was there a few years ago.

Anyone here had the Sunday brunch at Famous Dave's?

Their website says they have 5 in NY--2 upstate, 1 in Times Square and 2 on Long Island. Also a handful in NJ and one or two in each of a few other states.

Fairway coming to Queens?

The variance was finally approved yesterday. This article from before the decision was announced yesterday says that if they get in by April, they should be open by the end of next year, but it also sounds like they are hoping to negotiate for Waldbaums to leave sooner so they can start sooner.

New York's First Sonic Opening in Kingston!

Was just down in Texas for a week. Forgot to have the frito pie. Sob. Always have to make at least 1-2 stops at Sonic while I head south. On the overall, food is no better or worse than any of the other fast-food chains--just different. One plus is that breakfast is offered all day. And the "toaster" sandwiches are burgers on thick-cut white bread rather than on rolls. Have never heard of any of the servers getting into or causing an accident.

Maybe you were thinking of Morton's on Northern Boulevard, in Great Neck? It's just east of Middle Neck Road. There are one or two restaurants right near it. But neither Morton's or Peter Luger's is local to the golf course.

Has anyone tried "aged," the new steak place in Forest Hills?

I looked--wow--guess the word "retrain" is something that management there is going to have to learn, fast.

Didn't think of the cooler idea. Good to know about the ice.

I tried one of the turkey meatballs. Very salty, not worth buying again. But the bowtie pasta salad was pretty good and that I would buy again.

I went there yesterday afternoon with my sister. It was crazy.

By the time we got there, the 2 to 4-pounders were gone--not surprised. We got ones slighty smaller. My sister cooked them at home--she was afraid that since we were going to Bayside, they would continue steaming in the bags for too long and get tough. The lobsters were great.

I picked up some cold salads and a few other things to try. They have macaroni salad and potato salad at 2 prices. Bought the cheap ones. Flavor no better or worse than typical deli-counter commercial stuff. Also tried tortellini salad (w/broccoli and sundried tomatoes), which did not have tons of flavor. Haven't yet tried eggplant rollatini or turkey meatballs stuffed w/ broccoli rabe or bow tie pasta salad with feta cheese.

FYI, even though it is cash or check only, they do have an ATM for which there is no fee on their end, only whatever fee your own bank charges.
