Maple Buttercream

I just made this this morning and I had read everyones comments about the amount of syrup. I made this with slightly cold butter and added about 3 Tablespoons of syrup to the butter as it was whipping, then added the sugar, vanilla and salt and whipped it for half the time. I tasted it and it wasn't very maple-y and too thick. I slowly ended up adding the whole cup of syrup and it was delicious. I am not sure if my process was all necessary but I think it only works if you add the syrup while it's whipping.

Moist Carrot Cake Recipe

Wow this one is good. I made it for my daughters daycare birthday party so I took out the nuts and raisins but it was still awesome. I topped it with the Maples Buttercream and the kids ate them up. Making this as cake pops this weekend.

Strawberry-Filled Cardamom Cupcakes

So I saw this recipe and thought it sounded great but I had no strawberries, so I hacked it. My husband is South Asian and makes the best cardamom chai at home. I subbed in the chai for the milk followed the recipe as written eliminating the strawberries and they were amazing! So amazing we didn't even frost them.

Here is the chai recipe:
1 cup half and half
5 green cardamom pods smashed
2 cloves
1/2" chopped ginger
3 inch piece of cinnamon bark
2 allspice berries (my addition, I love them)
1 tablespoon Red Label Orange Pekoe tea
1 tablespoon jaggery or sugar in the raw

Combine it all in a small saucepan and put over medium low heat till it just boils. Take it off the heat and let it steep for about 5-10 mins. Strain the tea and enjoy!

Pumpkin Cookies with Butterscotch Chips

I keep coming back to this recipe over and over again. This is a huge crowd pleaser and the recipe is very adaptable. I have made these vegan and gluten free and they have always come out delicious. If you have the time roasting your own pumpkin takes these to another level. My family are also not big on butterscotch so I add walnuts, dried cranberries and/or chocolate chips. Of all my cookies these are the most asked for at pot lucks.

Tunisian Lamb and Quince Stew

I have made this dish twice: once slow method and once in the pressure cooker. I have to say slow method has it hands down, the stew was the perfect constistancy, lamb was like butter and the quince were tender and flavorful.

The pressure cooker did alright but the stew didn't come together as well and was more watery, also the quince broke down into a visually unappealing (yet still delicious) pulp.

I also substituted Ancho Chile for Chile de Arbol in the slow cooked stew and really couldn't taste much difference.

Pfeffernüsse (German Spice Cookies)

I made this dish and while it was very popular I felt the honey flavor was overpowering the spice and citrus flavors of the cookie. Will try it next time with less honey and post results.
