Where do chefs buy cookware in NY?
The prices are much better at their store on the Bowery (183).
Baking bread with kamut flour ??
I haven't used it, but with a litle research came up with the fact that it is lower in Gluten than regular wheat. Like spelt it is a form of wheat that is easier for some to tolerate and it is less processed. In one place it was recommended to use 7/8 of a cup for each cup of reguar wheat and in another to combine with other flours.
Smoked salmon ideas - no cheese
I like smoked salmon with egg salad. Great as sandwich on a bagel and a nice change from Touffi "cream" cheese. How about in or on Deviled Eggs. Also a LEO omelet; lox, eggs and (carmelized) onions?
Zabar's vs. Fairway
Fairway wins on prepared food.
Zabar's wins (by a landslide) on cookware items.
Fairway wins for other non food items (vitamins, soap, cleaning products)
I don't really take it as comparing when we are identifying which categories each should shopped at for.
Need suggestions for Passover meat course (not chicken) that is easy to reheat
I had 3 suggestions:
Brisket, Brisket or Brisket.
Best when reheated, already sliced so serving is easy, leftovers no problem.
News on Trader Joe's on UWS?
My standard line to something like this is:
I've never seen a shopping mall with only 1 shoe store.
If you're food shopping it will be convenient to have a number of different places all in the saem few blocks, as they're all good for different things.
Lessons on Balancing Flavors
Agreeing with afoodyear, and relaying my sole experience. Practicing a receipe for a culinary test. Sole in a simple cream sauce. Tasted too much of the shallots. Added proper amount of salt. Tasted perfect.
Half bottles of wine
I don't think anybody has a particularly strong selection though you will find some at Sherry Leman and most other good wine shops. It ususally doesn't cost anymore to buy an okay full bottle and I find wine generally does keep longer than they say if your not talking about the top stuff.
Help - need to plan a cocktail reception for 50 - 60
There's a private room at Aureole on 42nd which might work depending on budget.
What is one tip that you learned about cooking that was simple but made a huge difference? [old]
I use a kinda of squat (cause I made it myself) egg cup. Similar to using a shot glass.
ISO casual cafe/winebar/coffee shop for group of 7 friday evening, preferably near MoMA
How long do you plan to meet for?
AQ Kafe on Bway at 58th is a good option, but they close at 8pm acording to the website,.
Weekday Breakfast at Veselka?
Today it would be Veselka, but it might have been Kiev. Do you remember if it was on the east (Veselka) or west (Kiev) side of the street. Don't worry if you can't, Kiev is gone.
In search of moderately priced restaurant for small (<50) wedding dinner
The back room at Hundred Acres would be perfect. There's also a separate room at Crispo that would work, and if you decide to blow the budget I'd say Daniel.
Jewish Recipes: Ashkenazi VS Sephardic
The sweet gefilte fish is the polish style otherwise its all Ashkenazi.
Adafina is the Sephardic version of Chollent.
Most Jewish food is just local food from where people lived adapted to the rules of Kashrut/
King Arthur Flour worth the $?
I'm not sure what flour you are referring to as " The European Style Artisan".
King Arthurs commerically labeled Artisian Bread Flour is the equivelent of All Purpose (notice how the description on the link says use for European style breads), just at the Sir Gallad is AP, and King Arthur says so in their Baking Cook book.
The use of different names and even categories for commerial verses packaging is a bit confusing, but due to their tight rein on protein variences they really do work out okay.
King Arthur Flour worth the $?
Artisian is their Organic equivalent of the All- Purpose.
One important thing about King Arthurs Protein levels is that variance percentage is much lower than other flour companies, so though the protein level quoted may be slightly higher, if you factor in the varience difference it can become moot.
Flour question
All American (this is a big difference between American and European flours) conventional flours contain Malt. If you need to avoid it, some Organic Flours do not. King Arthur's organics do have it.
Suggestions for "make ahead" vegetable side dishes for Christmas Eve
I have sucessfully made this
http://www.epicurious.com/recipes/food/views/Trio-of-Salads-1860
and I've done them ahead. Very french bistro and though not "green" gives you something salady that should be different enough from what you'll serve the next day
Help with an afternoon tea menu (including another quiche question)
I've sucessfully done mini quiches made with pie dough (pate brise) in mini muffin size.
Need an experience restaurant with a table in the kitchen, or wine cellar
There is a table in the kitchen at Gordon Ramsey. Bigger than a 4 top, but these days you never know..... With 4 at it though, everyone would have an excellent view.
Fun ways to serve salad at a party
Another simple idea:
Greek salad on a skewer. A piece of cucumber, a cherry tomato, a piece of red onion and a piece of feta. Add oregano to creamy or not italian dressing for a dip,
Port Authority Bus Terminal area (8th Ave/ 40th St) - breakfast place / lounge
There really isn't much to suggest for what you are looking for in that area, but with 4 hours if you don't stray too far, ie stay west, you could easily cab it to somewhere where you stay for a while and then cab it to your ship.
My first thought might be City Bakery on West 18th St. Fabulous hot chocolate and a full buffet which will have good gluten free options.
I'll post back if I think other ideas.

Non-traditional pies that are worth it... Thanksgiving
One year I did a ginger pear pie, which was close enough to apple, but stll different and quite delicious.
Newbie vs. pancakes
The problem with electric stoves is that once they heat up, they generally hold the heat, as opposed to gas which becomes cooler as soon as you lower the flame. The way to compensate is to remove the pan from the coil just long enough to lower the temp. It definately sounds as if your heat is too high, so you need lower the setting and get the batter in the pan earlier. Let them cook until you see bubbles on the surface, check the bottom for color and then flip.
What to do With Pomegranate Molasses [moved from Quebec board]
Here's my favorite, also a NY Times receipe.
http://www.nytimes.com/2004/09/08/dining/081RREX.html?scp=1&sq=georgian%20chicken&st=cse
I've liked a mahammara that I made too.
Cooking stuffing separately but still delicious?
Thanksgiving Food is more about nostalgia than the best food. Mom and my Aunt (who alternated the meal when I was a kid) used Pepperidge Farm so I say you have use it.
I would be will to swap out the sweet potatoes with marshmallows, but my Mom wouldn't stand for her grandkids not have it.
Does anyone know Lyle's Golden syrup?
There are at least 3 sources for it in NYC. Fairway has it, as does Meyers of Keswick and Tea and Sympathy. The last 2 will probably ship it.
