Fear of smoking

I can't cite specifics but I've heard that, literally, smoking is hazardous to your health. It's not much different than tobacco smoke in that unhealthy residue in the smoke permeates the meat. From my own experience, the few times I've had smoked meat, I found that it didn't enhance the basic taste but did add another level of flavor at the edge which didn't really impress me. Is there more to it than that? Am I missing something?

Another thing I remember about Middletown back in the 50's was the fear some people had of going there because of the 'insane asylum'. I recall being told never to go there because it was dangerous. M'town had a bad rep back then.

They're not that bad. I just don't like the fact that they're pre-made, not made to order. How long have the pies been sitting under the lamp? McD's does the same thing with the burgers.

Apparently you've never been to a Jewish deli or seen jars of them in a market. Dills are not sour.
Sour pickles, naturally fermented, are rich in probiotics and nutrients. Making sour pickles is very easy using only salt, water, pickling cucumbers and spice.

I've learned that a schmear doesn't have to be cream cheese. Chopped liver (pate), egg/tuna salad and PB can also be considered schmears. IOW, anything spreadable.

That's the name I know it as but other bars may have a different name for it. I think one place calls it screeching monkey.
It's equal parts green chartreuse and myers 151. For sippin' only; Very potent ( for me).

Depends on the circumstances and who's paying. If I'm waiting for my take-out order, I'll have a cold beer. If I'm dining with family it's LI iced tea w/myers rum. If I'm sitting at the bar with friends, I'll have a shot of wild turkey with a beer backup. If we're sitting at a piano bar and I'm not driving, I'll have a 'screaming chicken'.

That's what I just learned here; use indirect heat after searing. It'll also save gas if I don't turn the 4th burner on.

You and a few others recommend drying the meat first. What I've been doing, fairly successfully, and what I've seen chefs do, is coat the meat with a little olive oil and then add my seasoning rub.

I just learned something, mcf. I always have the lid closed but I've never moved the steaks to indirect heat to finish. That's probably why the meat is still raw when I take them off after charring.
