invert sugar (glucose) syrup not made from corn?

I'm not sure why your nougat would emerge off-colored if you used cane syrup.

You can make your own invert sugar with cane sugar -- regular table sugar, white or otherwise -- by cooking it for about 7 minutes with an acid. By weight, 2 parts sugar to 1 part water + your acid, which could be a pinch of sour salt, cream of tartar or splash of lemon juice.

It's funny, I was actually hoping some darker sources of sugar/invert sugar would make my homemade marshmallows turn out LESS white, but all that whipping = white white candy.

Nectarine-Amaretto Sour

Hey Miriam! Sorry to hear about your food poisoning experience.

I like the texture real egg white gives to shaken cocktails. There's nothing like it. And alcohol tends to kill bacteria. I'd sooner put a shot of bourbon in this to up the proof than replace a farm-fresh egg with factory-farmed pasteurized ones.

Where can I find honey - like the kind in the Fage Total Yogurt

Bedford Cheese in Williamsburg has a small but well curated selection of honeys. All are designed to complement the cheeses they sell and some may pair well with your yogurt.

I got a lychee blossom honey there which is among my all time favorites. It's dark and buttery, sweet without being cloying.

Knife Sharpening - NYC

I know this is older than sin, but it came up in my searches for a knife sharpener in Manhattan. Westpfal moved next door to 107 W. 30th Street, between 6th & 7th. Their phone number is the same -- 212.563.5990.

Closed weekends. Generally a 3-4 day turnaround on knives.
