Paris: Japanese/French fusion: where would you go?

I've been to Concert de Cuisine, Passage 53, Sola, Kei and Le Bigarrade and also think Sola is most japanese inspired. For me the best meals were at Kei.

Upscale Dinner in Singapore

Hi Julian,
you're absolutely right that Andre wouldn't look out of place somewhere in France, and actually that is exactly the issue I somehow criticize. I mean, if I want French food, I can go to France. But if I'm in Singapore, I would like to have French food with the Singaporean accent. I have missed this local accent . Nevertheless, Chiang is doing a great job and I'm glad we have been in his restaurant.

Upscale Dinner in Singapore

Well, we had pretty the same menu as described by Julian recently. We did enjoyed it, though I was not so euphoric about it like Julian seems to be. Andre is definitely one of the best in Singapore, perhaps even the best. But far away from being one of the best in the world or even in Asia. ( I say, Ultraviolet in Shanghai!!!). Yes, I know, he is on Pellegrino's list, but...

L'Abeille & Sur Mesure – opinions?

I have been to Sur Mesure this year, and, well, rather uninteresting and definitely not worth the money paid. I know Passage, MBC, AS, Akrame and Kei. I don't think that Akrame is similiar like Agape Substance, quite different cooking concept. But both very good and worth to spend time and money. The same is Kei restaurant, very good. I have heard a lot about L'Abeille, should be very good too, has also a very high rating by the professional gourmet critics. MBC is good, but not the level of Akrame and co..

Looking for Shanghai Recs

You can try Shanghai Min, www.xiaonanguo.com.cn
It is one of the oldest venues in Shanghai, have several branches. Offers an honest food, pretty stable and good quality. We visit it almost each time we're in Shanghai. It is nothing of "wow", but good. I also like Lost Heaven pretty much. They have now a new branch on the Bund, very impressive.

Keystone Restaurant , Singapore

I don't think that Keystone chef cooks molecular or avantgarde. In any case it is not what we in Europe understand under molecular and avantgarde. And today pretty each chef uses some molecular techniques. I would say, at Keystone he just has a style of his own, or is trying to find a style of his own.

You may be right concerning the "famous chef" bonus. That applies for both, Keystone and Andre. I don't know if Andre is booked 2 or 3 months ahead, I have got a table 10 days before. That is true that the restaurant was completely booked out on the evening we have been there. 50% or more, including ourselves, were non-locals. That is probably the fact which allows him to keep the high price level. I don't mean that dinner by Andre was bad, no, it was very high level (definitely higher than Keystone), but there were no surprise, very clear french influence and somehow unstable.

I'm really curious, how you, kleyoh, will find Andre's.

I have heard about La Cantine, but I'm not so interested in French-influenced cuisine, since I lived in Paris for some time and learnt a lot of French cooking. Probably that was the reason why I wasn't impressed by Andre so much.
Keystone's style was special, though sometimes still imperfect, but they are also thankful for some feedback there. That means, there is a wish to improve.

Mr. & Mrs. Bund id a kind of French bistro. The level of food id good. The location is nice, it is directly on the Bund, so you can go for a drink after or before.

There are also a couple of new venues in Bund 3. I believe, one italian and one spanisch. We got a look at the both 10 days ago while in Shanghai, but we didn't dine there. Both were pretty full, so probably not so bad.

Keystone Restaurant , Singapore

We have just returned from Singapore, where we had a couple of grat meals. The first remarkable dinner was in Keystone restaurant. Really great dinner, the chef has definitely a style of his own. Also when not each course was perfect, still it was a grat meal, and reasonably priced also. My favourites were:

Blue crab, Tamale Soup, Olive Soil, Avocado

Kelp, Angel Hair, Lobster Oil, Cod Goujons ( absolutely gorgeous!!!)

Wagyu, Mayura Short Rib, Purple Mustard, Shimeji Pickles

It is a shame, that they only had 3 tables booked for dinner.

We also have been to Andre restaurant, which was good. Something between one and two Michelin stars level cuisine, but very expensive. The wine list was very disappointing and also too expensive for the quality. The service was a kind of arrogant. Nevertheless, that was an interesting experience.

Singapore - LP+Tetsu, anyone been?

Well, I do like french-japanese cuisine. But in this particular case it has 2 reasons, First, I thought that it can be interesting to compare LP to french-Japanese restaurants in paris, such as Kei, Passage 53, Le Bigarrade, which I have recently visited. Second, I cannot really decide on some other dining option for european or fusion cuisine in Singapore. By Iggy's I'm not really convinced with his concept, and I have heard a lot of odd stories about Andre and I'm not sure about Waku Ghin. Have you any suggestions?

need recommendation for upscale food in Singapore. I'm considering Iggy's , Tripple Club, Andre.
Have heard that Ku De Ta is the place to be, how about the food there?

I'll be also thankful for some tipps concerning singapore chinese ( crab and seefood) and indian food.

3 nights and four days in Paris in March: Overwhelmed where to make reservations........HELP

At Spring we have a very dissappointing food. Passage 53 I personally didn't like, but my compagnion was absolutely excited about the place. Anyway it is interesting to try.

Lisbon short trip report

Here are my experiences during our 3 day trip to Lisbon:

Continho do Avillez - very interesting and good meal, excellent service ( a little bit too fast), good wines, good price / quality. Book ahead

Feitoria in Hotel Altis Belem. One star Michelin, very stylish hotel and restaurant. Welcoming service, excellent food. Expensive, but worth it.

Chafariz do Vinho. A must for wine lovers, simple but delicious meal, a wine list to die for. Late opening hours, also good for Sunday dinner.

Solar dos Pressuntas. Good location. Local cuisine in a good quality, but pretty expensive. The only place in Lisbon, where the service was not on top.

Bar in the 6th floor of Bairro Alto Hotel. The best view over the city. A good place to start or finish the evening ( they close at 10 pm, but you can finish your drink in the bar downstairs, which has live music, pretty nice)

Paris report - La Bigarrade, Kei, Neva

My opinion is also basing on my experience, and I wasn't there just once. But nevertheless, it is obvious that every person has it's own expectation on food, flavour and ingredients combination, and last but not least, the price level. So our opinions on the same issue may be different. I assume that the Michelin tasters had their reasons why they gave La Bigarrade 2 stars.

Well, I know that and won't impeach her knowledge. However, she herself admitted that she has heard only good things about the restaurant. Probably she just doesn't like this cooking style, it is special and it is contraversive. And that's the point.

Well, Meg Z's review is well known, I have read it too, though I don't consider it to be true enough. Being to Le Bigarrade 3 times in the last 18 months, and trying 3 different menus I'm still very much confirmed that they're doing a great job.

I think the problem that some guests are facing are just the false expectations. If anyone expects to have a traditional french meal with appetiser, main dish and dessert, then don't go!!! Le Bigarrade is definitely absolutely wrong and you'll be very disapponted.
