Best cheese steak in the Triangle

Cloo's coney island has a really good cheese steak. They hit it with Guilden's spicy mustard. My wife and I love that place for all of there food. The chicken Philly is great too. I always ask for extra cheese though.

Henckels Twin Select, Wusthof Grand Prix, Global, MAC or Shun Stainless?

I have had 2 mac knives and I am still working with one in a professional kitchen with a broken tip and still live and die by it. www.cutleryandmore.com usually has a pretty good price on them. Get MBK series I think they are called professional. Only thing is the blade is reallyu thin which is good for cutting but beats the hell out of your hands. If you want Japanese which I also recomend because they are not stainless, although Mac's are a blend, check out www.korin.com. Any knife fan will drool over these traditional Japanese and western style knives. They range from around $100 to $10,000 so be careful. Good luck. Also, How many knives do you need. I prefer, 1 chef, 1 pairing, and 1 slicer. Maybe a good boning or bread.

Bamix For sure. I use mine at my restaurant all the time. What a great workhorse. Great little attachments available too.

Bentley's in Cary?? Great or not?

If you want too see where restaurants are going in the area check out Downtown Raleigh. City Market, Glenwood South, Hargett Street. Of course Durham and CHapel Hill are really moving along too but are little bit of a drive but very worth it.

Do I really need a paella pan?

Tienda.com has the black pans in all different sizes and a lot less expensive than anything allclad. They also sell the stands for cooking over a pit fire which is a lot of fun on the beach with some extremely fresh shellfish. Will47 you are definetly right about the spanish smoked paprika being essential but be careful not to over power the saffron in your paella.

Vacuum Sealers

I am looking for vacuum sealers for some pretty heavy personal use. I am looking for one which allows for a lot of control on the pull times. Mainly for different uses like marinating meats too compressing melons and the such. Any preferences? How's are the Foodsaver model's?

Nespresso is awesome. I tried it for the first time in france and fell in love with it. DO NOT BUY IT AT WILLIAM SONOMA. Go online to nespresso.com and there smallest model is $179.

A Week in Wilmington, NC

Deluxe, Circa and caprice bistro are some of my favorites in wilmington for more upscale food. All three are in the downtown area on the water. There is a nice pub down there too but I can't remember the name. Lots to do downtown just park and walk.

I have been using a wine box for dry curing meats like duck prosciutto and the such. It's relative humidity is a little high though. Here is a website that goes over curing meats and he lays out a great way to control humidity and such check it out.

How to re-treat a cutting board ??

I have a friend how turns his own bowls from trees in his woods. He actually rubs the bowls with walnut oil and man are they beautiful. He tells me the walnut oil won't go rancid either and is a little safer and better for the wood.

Raleigh rec. needed for Boston Hound

South is nice, zest cafe I love. If it is italian the guys who own south also own Vivace which I thought was awesome everytime I went. Of course it's a little morepricy but I love the Angus Barn. I'm going there in two weeks with my father who is coming in from France.

need machine for pulverizing dried pulses and nuts

I bought the kitchen aid grain mill attachment for work and I love. I gring cornmeal for polenta, dry spices and I haven't tried nuts. I did run some dry calasparra rice through the thing and it made a beautiful finely powdered riceflour. I haven't figureed out what to do with it yet. I was thinking of rice tuiles for desserts. Anyway, the kitchen aid grain mill can be a workhorse for what you probably want.

Traveling to Savannah Nov 4-9. Need veggie options!

I found savannah to be quite lacking in restaurant quality. My wife and I had traveled to Charelston a couple of years ago and were looking forward to Savannah maybe being along the same lines. Although, I didn't have the chance to eat at sapphire and I have heard some awesome things about it.
