Does anyone know where I could find beeswax in San Diego (for making canales, e.g. http://chezpim.com/bake/canele-recipe-method) ??? I asked the honey guy at the Hillcrest farmer's market but he doesn't harvest the wax. I'd rather not go the internet route because I would guess that it's costly.

Neither toasting them first nor freezing them first helps any (although they sure are tasty when they've been toasted first). Being too cheap to invest in a cracker, I'm going to stick with the giant rock / smashing method. Thanks for all the suggestions!

I have a huge bag of whole, un-hulled macadamia nuts from a friends tree. Those shells are HARD! A regular nut-cracker won't open them... the only success I've had has been with a big rock, but that just pulverizes the nut. Anyone have tips for how to get the shells off???

Trader Joe's sells organic cream-top (non-homogenized, which is preferable for cheese-making) for $3.49/ 2 litres... I have had lots of success with this for making cheese!

I made a bean soup and got a little over-enthusiastic with the sun-dried tomatoes, and the result is waaaay too tangy (and has disturbing flecks of reconstituted tomato in it, but that's a whole other issue...).

Any suggestions on what I can do/add to balance out the acidity?? I know sweetening it up might work, but I'm not really going for the "sweet n sour" thing...

I was thinking maybe blending in some ground up nuts, to thicken it and add richness that might draw away from the sourness.... but not sure if that would work.

Making cheese in San Diego

I'm looking to start making more complicated cheeses too. I was planning on ordering cultures online ... from what I can tell, Dairy connection (http://www.dairyconnection.com/hobbyiest.html) has the best prices (cheesemaking.com only sells one-batch packets, whereas the Dairy Connection sells larger quantities for the same price!) .

I would love to try making some different cheeses, but I am reluctant to drop a ton of money... perhaps if you're interested, we could go in on it together and buy a few different cultures and split them, that way we could both have some options (and save on shipping - have to do 2-day priority, so it's not supercheap)? Just a thought....
