Correct.

We use tapioca starch—derived from natural sources and minimally processed—for its thickening qualities. The minimal pasteurization of our cream, which concentrates the proteins, in combination with the tapioca starch, enables us to make egg-free ice cream. Ever think about how much eggs are processed?

What you won't find in our ice creams: Guar gum, xantham gum, carrageenan, etc.

To clarify, all of both Gelson's and Bristol Farms locations now have pints.

Correction: The recipes in Jeni's cookbook (for making ice cream at home) call for corn starch. The ice creams we make in our professional kitchen *do not* contain corn starch.
