Soup Broth Help

Hi all! Looking to clean out my freezer and came across a bag of onion/carrot/celery scraps I've saved along with a whole chicken. All are still frozen, however, I'm not sure of the age. No more than 2 years I believe. Would it all be ok to use in broth? Crock pot or on the stove?

Hmmm...let me catch up....last night was a nice steak served over salad with lime dressing....Tuesday was orange chicken served with garlickly snow peas.....Wednesday was leftover pizza :/

Have some leftover steamed crabs so I think tonight I will pick at them and maybe have some corn on the cob for a side.....lots of butter! Might also do the vodka-lemonade thing again as well!

My summer place as a kid was always the local pool (frozen Snickers bars!!) and the beach...good times!

WFD tonight is not home cooked as it's Take Out Friday.....getting some potsickers, spicy green beans and sushi! Just need some sort of adult beverage for later - possibly lemonade mixed with cherry vodka.

Last night I wanted something different from salad (surprise!) and since the AC could be off for a bit since it wasn't so blastedly hot, I went for chicken + veggies with a green curry sauce. Easy peasy!

Still had my usual salad last night to use up the last little bit of salad mix I had....alongside I had some pan fried rainbow trout I found at BJs on Sunday topped with Trader Joe's corn salsa....YUM!

Super YAY for the Rosemary & Raisin crackers - the bag didn't make it thru the weekend.....

Also a YAY for the coffee ice cream - super rich with a noticeable coffee flavor....I couldn't eat a lot, but it was quite good.

What's for Dinner #311 - the Relax, Kick Back, and Enjoy Summer Edition [through July 11, 2014]

Trying to use up what's in the fridge but cannot take another salad.....so WFD is the last bit of leftover baked beans from the 4th, some cole slaw and turkey burgers. Not exciting but I'm trying to strongly recommit to not wasting food. Just so tough to cook for 1 person.

Paleo for One Person?

Hey there PH! Yes I incorporate some dairy like certain cheeses and Greek yogurt, so I'm not fully Paleo in that sense. And I do purposefully do big batch cooking like you do as well - crockpot meats, bolognese, etc.

A local ShopRite does package smaller portions of beef cuts plus I break down big packages from BJs of chicken and pork into freezer saver bags.

I do like your repurposing idea.....I get so tired eating the same things over and over - gets boring! I like the stuffed tomato idea a lot. Thanks for the tips....need to keep thinking of ideas to keep it fresh.

Paleo for One Person?

I'm trying to get back to eating (mostly) a Paleo way of eating as I just feel better doing so. However, being essentially single, I'm finding it hard to cook for just myself without a ton of leftovers and a clogged freezer. As it is now I do cook in bulk and via the crock pot and freeze portions to have later. I do eat a lot of protein + veggie meals as is.

Any suggestions on how to cook Paleo for just one? I like to cook but don't want to be relegated to eating the same meals for weeks.

Back to the "boring" dinners again.....been having salad a lot for dinner as it's been just....so...hot plus salad is quick and easy.....did liven one up with some beets and goat cheese tho recently - which may be WFD again tonight!

Still working on leftovers of my own......so sauteed some sugar snap peas (beans?) with garlic and finished off the roast pork with them......bought some dairy free ice cream today for after and it's made with soy milk so it has a funky taste.....bleh!!! Consoling myself with wine instead, for me and the cat, who had a vet visit tonight and is seriously unhappy.

Making an effort to use up what's in the fridge before making anything new, so even tho it's super hot, last night ended up being just simple spaghetti and meatballs.
