The one thing I really miss since going GF is ______. Yes on the Chinese Food!!! I used to love just being able to get take out.....I do get the rice noodles tho..... Otherwise, I'm not missing much.....I've gone mostly Paleo now and am not missing any of the carbs I don't eat anymore...and am glad for the variety of GF sauces available.... |

What's for Dinner #181 - El Año Nuevo [old] Been very busy working a TON of extra hours at work with no end in sight......so takeout was on tap for last nite after work. Today I'm spending the day cooking for the week so I will have a bunch of easy dinners for the week.........Gathered some various leftovers for a few stuffed peppers - baked 3 halves. Have a chicken in the crockpot and I seared a few boneless chicken thighs in a pan & made a "sauce" out of some broth, lemon & wine. Currently am also marinating some beef strips for a quick pepper steak. |

I have no scientific bases to go by and am not vegetarian, but once I've gone grain free, my heartburn & weird throat issues have cleared up. If I go back, they flare up again.... |

low carb and reduced fat sauces I like simple pan sauces.....I like to saute a tiny bit of minced shallot or onion in some cooking spray maybe with a bit of stock then add garlic & spices. Deglaze with more stock and/or wine, spritz of lemon or orange or lime maybe (depending on your dish) or even a smidge of tomato paste. Stir & allow to thicken. To finish add a small slice of butter - makes the sauce silky and gives just a bit of that butter flavor. Also if you add a small amount of bottled stir fry sauce to the broth mix you'll get the flavor of the sauce with only using a little. So that's an option too.... |

So tonite is a low key evening at home - I'm almost feeling like pasta, but may do "munchies" instead..... |

RE: Tam.....good points! My husband is a picky eater + a vegetarian + not very interested in food. He does like what I do make and I try not to include items he dislikes, like chili powder or cumin (taste issue). BUT if I try to push him or cajole him into trying something, he'll push back & then won't eat something just on principle. So try to find some sort of compromise if you can.... |

What's for Dinner #180. Twelve Days of Christmas Edition, part deux. [old] The plan was to make pot pies last Sunday after baking for the step-daughter, but I was too tired & we got takeout instead. I've been off all week & just casually picking at things/going out & not making any official dinners. Have an urge to start cooking again! So since tonite is cold & snowy (well it's stopped now) and I have some nice puff pastry & extra veg. pot pies are on the menu tonite!! Inside will be: parsnips, potato, carrots, leeks, peppers, celery, mushrooms & peas. Chicken in mine. In the oven as we speak! |

Do you have any food related New Years Resolution for 2013? To continue my resolution from last year: Little to NO food waste and to keep my pantry/fridge/freezer organized. I got a new freezer this year with bins, baskets, etc which helps a lot. I would also like to continue too cook more at home instead of relying on take out, going out, etc. Also, to delve more into the Paleo style of eating. |

I've never been a very picky eater, but as I grew up I came to find that some of the foods I refused to eat or try were because they were ill prepared by my mother as a child. So I got to thinking really WHY don't I like said foods and it was mostly because my mom prepared bland, overcooked, poorly seasoned food...... So maybe it would be helpful to ask him why he doesn't like something. |

Need a GF, yolk free, PB free Christmas dessert recipe Today with the step daughter I made Chex cereal tossed with melted white chocolate mixed with crushed candy canes. PB balls (buckeyes?) - How to make chocolate coating glossy and graham crumbs or not? I like to use Almond Bark for a coating for cake balls or Buckeyes......I get mine at Walmart & melt slowly in a 1.5 qt. crockpot set on warm... |

What's for dinner #177 - Advent Edition [OLD] Ended up having to work yesterday, so had a simple dinner of spaghetti & meatballs. Felt like ham today, so got a very small spiral ham which I heated with a glaze, found a half a bag of coleslaw mix in the fridge so made some slaw. Think I'll also have some GF mac & cheese alongside. |
