Foods to try in Amsterdam & Copenhagen

My husband and I are going to Amsterdam & Copenhagen in July. We have never been and other than cheeses, I don't know what either cuisine is like. What foods should we try in both places?

Deflating cupcakes

I tried a new recipe from a magazine last night for neopolitan (sp) cupcakes. It called for fudge brownie mix in the bottom 1/3 of a cupcake liner, bake for 8 min. then fill the rest of the way with strawberry cake mix (made with 3 eggs, 1/3 cup strawberry applesauce, strawberry cake mix and 1 c water), bake for another 10-12 min and remove from oven and let cool. I did just as the recipe called for, but 2 min. after removing the cupcakes from the oven, the cupcakes deflated....and we discovered the brownie mix at the bottom of the cupcakes had melted. What could have caused this? I followed the recipe to a tee.

Any reliable, decent airport food?

Kansas City is my home airport and I fly about 45 weeks a year for business. The food there is horrible indeed and the worst part about it is that the airport nor the city seems to care enough to improve it. They are just content enough with the way it is. By the way, all gates now have restrooms and food kiosks (however poor they might be) inside security.....just not enough of either.

Looking for interesting cheeses to try

Thanks for the websites. I live in the Kansas City area and there are a couple of gourmet cheese stores here as well as Whole Foods, Trader Joe's and Dean & Deluca. But sometimes the choices can be overwhelming, thus the requests for other peoples favorites.

Looking for interesting cheeses to try

I am an admitted cheeseaholic. I have tried various cheddars (from Australia, Ireland, UK, as well as cheddars from Vermont, Wisconsin and Oregon), swiss, emmenthaler (sp.), harvarti, jarlsberg, etc. Last week I bought some gjetost from Dean & Deluca....he recommended eating it with an apple (which turned out to be fantastic!) I also love this stilton with mango and ginger that they had.....may have been a gimmick but it was delicious. I also am addicted to Trader Joe's Wild Blueberry and Vanilla Chevre goat cheese. I would love more suggestions of cheese to try. What are some of your favorites? (And forgive my possible misspellings of some of the cheeses I mentioned).

Carrots turn green in carrot cake

I am embarrassed to admit this, but when i have tried making any carrot cake recipe from scratch, the carrots always turn green when I pull the finished cake out. When I googled about this, the answers I got said that the carrots were safe to eat, but gave no solution to the problem. In fact, several sites made it sound like that was the norm. I can't believe that's so, but I can't find a solution. I hope someone can help me

Watery pie filling

I've tried making 3 cherry pies, a blackberry pie and an apple pie this year and no matter what thickening agent I use (flour, cornstarch or tapioca), the filling always turns out watery and never really gels up. The flavor of the pie is fine, but just soupy. What am I doing wrong?
