Wingpocalypse Now

I hate football but love wings. I can't imagine there is a connection between wings and football like there is with Thanksgiving and turkey. Some people, gasp, don't eat turkey on Thanksgiving so I really doubt sports bars will have to cut wings from their menus.

Real Chefs Take Shortcuts

In a perfect world, we all would be able to have our own little veggie garden and buy the other 80% at a local farmers market. It is snobbish to assume that everyone can follow these ideals. In the real world, there are not farmers markets in every city and not everyone has the time to grow their own food.
Most supermarkets at the least carry organic produce and canned or frozen veggies so even shopping at a chain store can be somewhat environmentally friendly.

Ramen Basics for the Noodle Novice

I just made my second batch of Tonkotsu ramen. The first batch was made with dashi and the second with miso, both versions were great. Got the recipe from Chubbypanda. The broth takes a long time but its so rich plus the cha shu.

Pie Crust...Do You Add Lemon Juice or Cider Vinegar?

I use the same recipe and its always turned out perfect. In other recipes, I've used an egg yolk, cider vinegar, lemon juice and a little ice water all blended together. This also yielded a tender crust I used for many different things.

Toxins Are the Evil Spirits of Our Times

Everything is tooted to "cleanse the toxins". Apple cider vinegar, acai berries, there's always some new panacea coming out. You'd think people were near death if they didn't try some juice fast or the master cleanse because of all the "built up toxins". How about try not eating fast food so much? Or just a walk around the block for goodness sake. Obviously the "toxins" have killed any brain cells these celebs had left.
Starving yourself only forces your body to create toxins, ketones anyone? They destroy your liver and kidneys. But hey, your skinny so who cares?

Fregene's Pizza - Beer Pizza Crust Recipe

I really like to use this recipe as a base to experiment with. I first made it as is, the next time used a sponge to start, now this time I am using a little flax seed and nigella seed. I had an Iraqi style pizza in Baghdad and it had nigella seeds which gave it a unique flavor that I hope I can duplicate. Haven't baked this version yet. Fingers crossed. The first two turned out great and I highly recommend this recipe.

Tres Leches Cake

Wow, just wow, this cake is SO amazing. I've never made a cake like this so I was intimidated but after 4 hours in the fridge, I had to try a small piece. It blew me away. I only had fat free condensed milk, must have not realized it was fat free when I bought it. I added 2 tbsp of aged dark rum and 1 tbsp of vanilla rum.

Thai Shrimp and Chayote with Wild Lime and Red Curry Sauce

Just made this for dinner. It is so good!. I didn't have keffir leaves but used zest from a lime. The flavors are great.

Spicy Chicken Meatballs with Garlic Coconut Sauce

So good. The flavors melded perfectly. I used ground pork and added the cilantro (fresh coriander for Northerners) to the coconut sauce since I didn't have any parsley. Will definitely make again.

Sweet Chile–Chicken Rice Bowl

I just made this and it is very good, I made some alterations. First I cut down the portions (only cooking for 2). I left out the Korean chili paste and used regular red pepper flakes. The chili sauce does not take that much effort, its just like making salsa. The chicken, I used breast meat and while it was cooking I spooned on some of the chili sauce, Didn't need any jalepenos as the chili sauce is plenty hot. I didn't deep fry the fried shallots. I don't think it are necessary. I fried the egg instead of poach since I had the oil from the shallots. I did accidentally substitute shallots for the scallions, I am not used to seeing green onions called scallions. Try this out, it's really good if you love chili.
