Does anyone know of any interesting place to eat or good foodie andventures to have near Madison, Wisconsin? Specifically in Cambridge or Lake Mills would be even better.

Great Food in Milwaukee

What about The Roots? I've been threre and thought it was interesting that a chef and a farmer teamed up to have a constantly changing menu. The atmosphere, especially downstairs and on the back deck, were also nice.

The other place that was interseting was a restaurant in an art gallery - can't remember the name. The food was good, but mostly the atmosphere was nice.

Chocolate Homemade Marshmallows

Help!!!

I need to make marshmallows tonight and I wanted to try to make some that are chocolate.

The problem is that I don't know where in the process to add the chocolate and in what form.

The recipe I use has the following components:
• stiffly beaten egg white
• gelatine softened in cold water and then dissolved in the sugar syrup
• a sugar syrup made from water, sugar, and corn syrup

Basically, you boil the sugar syrup to 260 and then pour it slowly into the egg whites while the mixer is running. Before long you have a ooey-gooey mess of white marshmallow that gets spread in a pan and cooled.

If you want to flavor them you add extract and/or food color right at the end.

To make something chocolate I would normally add cocoa powder or melted chocolate, but I don't know when I would add powder and I fear that melted will cause the consistency to be wrong and for them not to set.

Any ideas?????

My fantasy trip to gourmetland, CA

Hello All,

My absolutely fabulous mother is going to take me on a long-needed vacation to San Franciso in September. She's agreed that we can do all the gourmet things that I can find for us to do, so I need some advice.

We are going to stay in SF but will have a car to be able to take some trips outside the city. We've talked about Napa and the area surrounding that as a possibliity.

I'm not overly familiary with the area, but I'd like to find places to visit including:
• olive grove where they press fresh oil
• cheese makers, cheese shops
• date farm
• small town types of places that make wonderful, delicious local products
• fabulous restaurants
• interesting food markets
• farmer's markets

I plan to bring a cooler and a large suitcase so that I can bring all kinds of goodies home to Chicago with me.
