It was the restaurant of my hotel in Traben-Trarbach, on the Mosel River in Germany. I had wild boar with wild mushrooms and a three-tier dessert plate with balls of sorbets, ice creams and mousses. I found out later it had just lost its Michelin star, and when I returned, it was serving schnitzels and sausage.

Beer, the hoppier, the better.
