A balanced dairy meal for shavuos that does not include fish...

As I'm planning for shavuos I keep running into the problem with having the meal be very dairy/carb heavy. My wife is not a very big fish fan and so we can't use that as a protein. We always do a goat cheese potato gratin as a side (which is seriously one of the best bites of food I have ever had its so damn good...) and I'm having trouble finding something to pair with it as a main that isn't fish or a pasta. Any suggestions out there?

Deckle vs 2nd cut brisket

I believe it is the same thing.

Deckle/2nd cut is usually smaller, about 4lbs and fattier than first cut. I happen to prefer the deckle because when I slow roast (at 250 degrees for about 6hrs) it keeps the meat moist and is really delicious. Internal temp around 190 degrees and a nice spice rub at the start.

First cut/point cut is usually larger in size 8-10 lbs and leaner but it might dry out faster.

Kraft polly-o string cheese

"Who cares" Seriously!? Isn't this the site about finding good food. If the kosher brand (and right now I'm partial to natural kosher with the red label) is better (and I'm not saying its going to be) then I would continue to buy the kosher brand as opposed to kraft.

I wasn't commenting on the fact that its going to be infinitely more accessible than kosher brand and in a pinch I would totally buy it for something to eat. But I haven't had much problem finding cheese in the past. Even walmart sells capriello mozzarella in a lot of the stores. Trader Joes will also have, in addition to goat cheese and feta at a lot of stores. Even whole foods has a kosher cheddar line...
And I would take a nice ripe avocado over an ok stick of string cheese any day.

Bagel Country in Skokie under new ownership -

Had a very nice experience at emmas today. I think the decor is nicely updated and clean looking. The chalkboard menu is a nice touch although I wish they would give you a chance to know what the dishes were rather than having to wait until you get up to the register. The service was up to par and one of the servers asked how everything was and if i needed anything else. got the caprese panini (mozzarella, tomato, pesto), pesto and cheese were tasty. I ordered whole wheat bread and while not the typical panini style was still very good. The chips they serve were good and overall it was a good experience. A drink, sandwhich, chips for $11 is pretty good.

Anyone brined a Kosher turkey?

I have to disagree lcool. I have been brining my turkey for the past 4 years and roasting it in the over and it is ever so moist and delicious with a nice crispy skin. I follow the alton brown turkey recipe on good eats and brine for about 12-16hrs before hand. I do lessen the salt just a little bit but not that significantly. I also highly recommend the gravy that is associated with that recipe as it is delicious!

I would try a different brine if it didn't work...

Side dishes that go with texas chili on shabbos lunch?

In the end we made guacamole and spiced gefilte fish as appetizers (rub was smoked paprika, garlic powder, black pepper) and we served some corn bread, cole slaw (vinegar based), roasted green beans and quinoa. I got the recipe for texas chili from cooks illustrated and it was delicious. I recently signed up for the on-line content and would highly recommend it. Thanks for the suggestions.

Adapting Turkey recipe for salt content

I see that I am the black sheep of this board. I have used alton browns turkey recipe for the last 5 years and every year I get a kosher turkey and I brine it too. I do cut down a little bit on the salt to half of the added salt (there is some in the stock too). I have never noted the turkey to be salty and it has a wonderful flavor and is always delicious. I would give it a shot if you want to try. I brine it for about 16 hours.

Kosher at Au Bon Pain

Actually you should check the original boxes that the pastries come in. A lot of them have a hecsher, chof-k, etc.... The only problem is that they place them in an oven with non-kosher items. But if you can get them in the box then you should be ok. At least that is the case in the hospital that I work in.

Is Kahlua bottled in Mexico kosher again???

Checked kosherquest today and this was the only post I saw regarding kahlua. Posted in mid august. Am I missing something?

Are you thinking of opening one up?

I happen to love mexican food and I think it would be a great idea since I live in chicago. I really don't think the frum community of chicago would support it though. I think that it might be a little too outside the box in this community.

Kosher wine recommendations for sukkot meals

Not sure if you already bought your wine but:
1. I might pair a spicy shiraz with teh sweet and sour, especailly since its ground meet with a tomato based sauce. You could do the yogez cabernet-shiraz blend. Btw, a great buy for the money, only 14 bucks.

4. How about galil yiron which is a great wine or if you really want to go all out the Red C by Covenant (it is yom tov after all). I'm also a big fan of yogez cab-petit verdot.

Hope it all comes out well.

Btw, what are you going to pair with everything in the end?

My Successful Mini-Applesauce Bundt Cakes with Apple Cider Icing--Sukkos Treat

La Prefereda has white canned hominy that is certified by the star-k.
Going to make a chipotle beef stew for thursday night in the sukkah. I tried a piece of the hominy and it is really different than corn. Interesting texture and a creamy feel. Looking forward to it.

How do you toivel a pasta maker?

To answer my own question, you don't toivel the pasta maker, you take it apart to the point where it was "made by someone jewish" and thus does not need to be toiveled. I will say that this was easier said then done but we did it last night and it works fine right now. We were a little worried that it wasn't going to fit together because it all falls apart once you take off one of the sides but with some help from my wife and her MacGyver like skills we did it. I would not recommend placing these in the mikvah as they would most likely rust and also interfere with the grease necessary to keep the rollers from sticking.

Kosher Italian Wine

We had a lovely bottle of white which i believe was from the Tal vineyard. Haven't been able to find it in the states but it was really great. Also had a really nice Red which we picked up at Ruth's in florence, it was there table wine but forgot what it was called, also very nice.

Trader Joe's Pizza Dough to lose kosher certification

We haven't had kosher dough in a long time in chicago. Of note, they also no longer have the OV (St Louis i believe) on one of there bagged lettuce which is a big bummer because it was the only pre-washed non-iceberg lettuce that was under hasgacha.

NEW CHICAGO RESTAURANTS??

Personally i think slice makes a great deep dish pizza, although they can have off days. I've heard the "Denny's" type restraunt is really going to be what chop touhy was, which doesn't really inspire that much confidence. I hope the pizza place opens in wrp though, we could use one other than tel aviv.

How do you toivel a pasta maker?

I was wondering if someone has had a previous experience with toiveling a pasta maker? My wife bought us a kitchen aid pasta maker that attaches to our kitchen aid and there is a sticker on it that says do not immerse in water, probably because it would cause rust or mess up the gears, i think. Has anyone done it anyway? Anyone know a way around it? Any suggestions would be helpful. thanks.

Best kosher Food in Chicago?

I went to manghal last night and i have to say i really don't think its as good as taboun. The ambiance is actaully much nicer than taboun but the food is not as tasty and the menu is not as varied. I also don't like the fact that i can't get a sandwhich past 4pm in the restaurant which i can at taboun.

Phenomenal Kosher Pizza? Does it Exist?

While that sounds impressive, if you look at the article you will see that the number two spot went to....domino's! I'm sure there pizza is good but i doubt its the greatest in baltimore, let alone the east coast.

That being said i am from chicago and i know i'm going to take a lot of flak for saying this but i really like slice of life's THICK/PAN pizza and think it really is the best around. Seeing as i'm a ba'al teshuva and grew up on places like lou malnatis, unos and the like so i do know good pizza. Also my parents, who do not keep kosher, really like slice's thick pizza. It can be inconsistent at times but overall i think its the best.

Kosher menu recommendations for Rome

I am very jealous that you are going to rome and more specifically eating at nona betta. i went with my wife on our honeymoon and we loved it! Everything that we had was delicious. I would highly recommend the fried artichoke and fried mozzerella balls. I know it sounds like a lot of fried stuff but it does not come off as very oily. I would also recommend the rissoto and a pasta dish, i think we had something with chicory and pecorino which was delicious. My wife got a zucchini in bechamel sauce which was outstanding and i had the fish baked in salt which was also wonderful, and not too salty.

With regards to yotvatah, it was ok, nothing special, and never went to chagat.

Sorry about the confusion by saying metro club is CRC, i usually just assume everything is CRC in this city.

I also have to admit that i have never personally been to manghal but everyone i have talked to prefers taboun. looks like i have to give it a shot.....

Best kosher Food in Chicago?

Metro club which is downtown and open for lunch and is really very good and a good deal. it should be on shamash.org/kosher under chicago. its under the CRC and has a kosher section to the restaurant. we had the bbq short ribs and they were really great. shallots just opened in skokie, and while i have never been to manghal, i think taboon, which is also in skokie since the west rogers park location closed is better.

The bread, wine, salt is a jewish tradition thing so you can always go for that.
