SKOKIE EASY and GOOD EATS (the fatter the better)

Admittedly not beef but Bone Fish Grill is an excellent fish restaurant - it is a chain but I find the food to be excellent and consistent.

Taboun Grill - is an Israeli place that has excellent schwarma as does Pita Inn

For beef -in addition to EJs Steakhouse - there is the Charcoal Oven on Golf in Skokie or if you want to head east there is Pete Millers in Evanston -

I am sorry there is nothing kosher near the Mag Mile

The closest is the Kotel Kosher - http://www.frenchmarketchicago.com/vendor/kotel_kosher - which just opened inside the Chicago French Market which is about 3/4 of mile from the Mag Mile.

There are a number of unique Chicago items - Chicago Deep Dish Pizza - Pizzeria Une or its sister restaurant Pizzeria Due, Lou Malnatis, Pizzano;s and Gino's East are all excellent - Stuffed Pizza - Giordanos and Bacinos are excellent examples of this style.

Rick Bay;less's Frontera Grill is not to expensive but you might be in for a wait unless you go early

Tenderizing Meat for the Grill

As others have said it really depends on the cut of meat and how you are grilling - rib eye steaks are very tneder as long a syou do not over cook -you can also control the tenderness by the method of grilling - indirect heat or smoking can make meats nice and tender rather via direct heat

Tips for traveler with a sweet tooth in Chicago?

It is a delicate dance - but I have used the Paula Dean method - http://www.foodnetwork.com/recipes/paula-deen/foolproof-standing-rib-roast-recipe/index.html - to great reviews - but you have to time it so that your done cooking just before Shabbos - take it out and let it rest

Where will you be staying adn will you have a car? This will help provide choices - definitely being in Chicago you will need try our pizza - there excellent choices all over - you can go to the birthplace of Chicago Deep Dish Pizze - Pizzeria Uno (do not confuse it with the chain that is spread across the US - this is the real deal) or its sister restaurant Pizzeria Due - other excellent choices for Deep Dish incluse Lou Malnati's, Pizzano's Gino's East or for stuffed pizza Giordanos and Bacinos -

Since it is made of ground fish the consistency it will be like a fish burger - depnding on the style of Manischewitz Gefilte fish - http://manischewitz.com/fishproducts.html - you will get subtle changes in the fish flavor -the major difference will be whether you have the sweet variety or the regular will be the biggest difference in flavor at least IMHO -

Have you ever made and/or cooked w seitan?

I have used Uptons Naturals Italian Sausage to make baked italian pasta dishes such as Lasagna and baked ziti - I keep kosher so this has been an excellent find

I have also used their Seitan chorizo for mexixan as well
