Achar / Acar pickling with just salt

I normally make the Penang styled Acar which calls for blanching it.

But I'm curious if there's a way to avoid any cooking of the vegetables, and do a slow salting process: I'm trying to see if a simple salting process will create a more crunchy pickle!

All the recipes I've seen for achar/acar include the blanching of vegetables in vinegar.

However, I'm wondering if anyone has tried doing a simple pickling recipe with just salting, and simply leaving it to ferment for a longer time? Results?

I've recently discovered Nakhon beer at Umami Burger during a recent trip to Los Angeles. Does anyone know where I can find it at either a restaurant or store in the Bay Area?
