Very nice. I think my mistake was adding too many vegetables to the pan. They just couldn't get that beautiful, sweet,carmelized browning. BIG difference.

Calling all hummus lovers

If I make it at home I usually like it lemony, but plain. Sometimes I add kalamata olives.
There are 2 store-bought brands I've been enjoying, Sabra and Basha. Basha roasted red pepper is in the fridge now. Very good.

Well, I made my twisted foil "rack" and then when I put the chicken on the pan of vegetables I forgot to use it! Found it later sitting on the counter...oh, brother.

I think I had too many veggies in the pan because it never got as carmelized and luscious as it usually does. To much liquid and steam, I suppose. I cooked at high heat, the chicken was crispy outside and very juicy inside. Vegetables were good, just not great.

Thanks to all for the help. Sometimes it is the simplest things that hang me up.

I could use some help with tonight's roast chicken and root vegetables, please.

The whole chicken is marinating in lemon, garlic, and rosemary and I'd like to cook it over a bed of root veggies. I have potatoes, sweet potatoes, parsnips, carrots, onion.

Should I set the chicken right on top of the vegetables in the pan or use a rack over the vegetables?
Also, at what temp and for how long?

I roast chickens all the time, and I roast vegetables, too, but wanted to do them in the same pan if possible.

Personal experience with tea sandwiches?

Sometimes I butter the edges and then roll it in something. For instance, when I eat Vidalia sandwiches I cut into quarters, butter or mayo the edges, and roll in chopped parsley. I would not try to do it for loads of people, though! :)

I have a great book called "Better than Store-Bought" that has recipes for many things we might ordinarily buy ready-made. Haven't had it out in ages, time for a look. I remember making a dark chocolate sauce but can't recall any others.

Parsley - what good is it?

oakjoan, i read your post earlier so I made this for lunch. It was just delicious, so fresh and flavorful. I squeezed on some fresh lemon and will add kalamata olives when I have it again for breakfast tomorrow. Great recipe, thank you!

What's For Dinner? Part XLIV

I used the jfood short rib recipe to make a pot roast. Garlic mashed potatoes, peas, crusty bread with warm, freshly roasted garlic to spread on. A nice salad with fresh viniagrette would have been great but I got tired of the kitchen.

My favorite way to enjoy crepes is to bring them to the table with butter and loads of lemon wedges. Powdered sugar optional. Couldn't be any easier and it's absolutely delicious.

An egg fried in olive oil and crushed red pepper flakes is delicious atop a slice of grainy toast. We have it for supper sometimes.

What is the real cream used in coffee?

My favorite is regular half and half. Full cream is delicious but for everyday I actually prefer the half and half because it gives the coffee nice smoothness without being too heavy or oily.

I agree with the others, deep six the fat-free.
