Sangria Recipes?

There isn't a tried rule for Sangrias, once you have your basics set with an appropriate red wine, brandy, orange liqueur, sugar, orange & lemon, you can go experiment what kind of fruits you like to go into your Sangria. Some bars just use whatever they have left in the kitchen to make it work. And regarding spices used in the Sangria, I guess it depends alot on the kind of red wine you use.

What should I learn to cook in Shanghai?

Not too sure about the difficulty since it might be quite tedious, but if I were you I'd definitely try to learn to prepare Hong Shao Rou which is a traditional Shanghai delicacy! Rich in flavour and absolutely divine in meat texture, its my favourite Shanghai dish.

Another point to note is that the amount of water to add into your recipe and the rising time is dependent on the climate you are baking in. Humidity, Temperature all play a part in the baking process requiring you to tweak your methods ever so slightly all the time.

Usually I just go with Jose Cuervo Reposado, Cointreau, Cane Sugar and most important of all, fresh & good limes. After getting the basic ingredients right, I think its more of putting heart into making it then the recipe.

Nooo, why'd you have to bring hof up? People are going to flood the place more than it already is.

At any rate, I agree. hof is a great little secret for those that know it. Hands down my favorite place to be after work. Their cocktails paired with freshly made truffles are just divine. Cha's is also an excellent choice for supper served canto-style.

SHANGHAI and TAIPEI for a solo traveler -- any recs?

I would go to Cha's at Huaihai Lu at least once for a late night supper. They're open even till 2 in the morning and its Hong Kong food with a 1970s teahouse feel. Really very fantastic and a good contrast to the bevy of Shanghai food you're probably gonna be having!
