One of the most recent great meals was at a 10-top dinner party in PDX. I ate sweetbreads and bone marrow for the first time during the 10 course meal and it was fucking amazing.

Baked Mac and Cheese. Or a pastie from the midwestern bar down the street.

My Canal House books are getting greasier by the day; Marcella Hazan; Julia Child; Alice Waters; and I'm excited for future grease splatters on the culinary school textbook I just ordered.
