Has anyone tried the sandwiches at Dallas Farmers Market. They are not listed on the menu as banh mi but the description fits. |

We fried some last night. The neighbor walked by the open kitchen door, made her way in and pronounced it the best fish she had ever eaten. It was good although it is much milder in flavor than other fish I prefer. I usually dust it liberally with blackening seasoning and fry it in some butter in a cast iron pan. Squeeze a little lime over the finished product and serve with some steamed vegetable or rice pilaf. |

I am hooked on these pickles I buy at a place called The Dutchman's Hidden Valley just north of Hamilton, TX. The jar says made especially for so I think maybe they could be somewhere in DFW under another label. I may have to try to make them myself. They are 7 dollars for a quart jar but I never mind paying that. I can slice a quart jar of regular dill pickles up in the juice and get pretty good results when I'm empty. |

You can get kimchee and some Korean items in Arlington at the Vietnamese grocery store. They sell small jars at central market and some walmarts. I usually make my own in a food grade five gallon bucket that pickles came in. |

Saigon Cali is my go to place. They bake their own bread right there. I like these better than any other I've tried. Cheap prices and good ingredients. Mostly a to go affair with only a small table on one side. I love the pork because of the warm meat and contrasting pickled carrot and daikon. Generous portions. Ba Le is almost striaght across the street and I think second best. You can buy your ingredients here to make sandwiches at home if you want to. They do have seating and an extensive restaurant menu. These are both in Arlington. The big Vietnamese grocery store has good ones in the back corner of the store. It's called Cho Saigon New Market. |

What kind of kitchen knives do you use? I bought a Kiwi brand cleaver at an Asian grocery store in Arlington, TX and use it almost exclusively. It cost $6.99 plus tax. It is stainless steel with a razor sharp edge that hold up great even when cutting through bones. It has a hardwood handle. I cut vegetables and meat with it. the only reason I ever use any of my other knives if for peeling or boning meat. I think this is a very common brand as I have seen it in several Asian stores. |

"Budget" knife recommendation needed for holiday gift I bought a Kiwi brand cleaver type knife at an Asian supermarket in Arlington, TX for about $7. I love it and have bought several more for friends and my mother. I saw them used on Youtube. I love it and almost use it exclusively. It's great for chopping vegetables and cutting up meat as well. This should be easy to find at Asian grocery stores in your area. I think it is a common brand. It is sharp, stainless steel, holds an edge great and inexpinsive to boot. Has a hard wood handle. I use mine just about every time I cook. My son loves chicken wings and I have found nothing better for cuttin them up. |
