Any reports from The Gold Standard today?

Yes it got really crowded (the fire marshal almost closed it down!), yes people ran out of food (I guess a lot of people love pork belly as much as I do), and yes some of the lines got waaaay too long (Palate, Animal, Anisette...), but you know what? I think we all got to eat some really tremendous food nonetheless.

My favorites were Animal's pork belly, Drago's seafood salad (which was so light and fresh, and delicious), and Providence's desserts (although Clementine had a delightful assortment of treats as well.)

Coctails in LA

Anybody have a chance to look at the cocktail issue of LA Weekly yet? I'm always so conflicted about these things, because once your favorite haunts get pegged, they often get inundated by rubes who would otherwise stick to their jack and cokes. Wow, that sounded way more snobbish than I'd intended. Oh well. Here are the links if you're interested. The article's a fun read.

Taco Truck Crawl Suggestions

You've probably already gone on your Taco Truck Crawl, but if you're ever in Echo Park at night, try the truck on Alvarado and Montana. It's usually just outside the Vons there. The suadero is delicious.

Cornish Pastry Advice?

Made a stew tonight. I'll probably whip up some pasties tomorrow. Hopefully there will be some leftover to freeze, but I'm afraid the chances of me eating them all are quite good.

Thanks for the tips! I'll have to make two batches now I guess. I love using puff pastry too, but I think it would be much more economical to just whip up a batch of crust.

Cornish Pastry Advice?

Does anybody have any tips or recipes for a good dough to make cornish pastries with? I keep day-dreaming about these guys, and I figure the best way to fix that is to just make the damn things and eat 'em. That said, I was thinking about trying a plain ol' pate brisee. I'm afraid that might be too fragile, though. I seem to remember an episode of Good Eats where Alton Brown described the best dough for a pocket-ish pie as more biscuity than standard pie dough.

Any info / advice is welcome.

Trader Joe's Cookbook?

Here's something curious. Has anybody tried any of the recipes in this book? I don't think I'll be relying on TJ's for all of my ingredients ever (especially my produce, wtf Joe?), but I must admit I do have an affinity for the little market that could (and has over the years).

Was wondering if any of you have spotted this book out in the wild and given anything a spin.

Does a glass cutting board = dull knives

This thread is kind of hilarious. It had never even crossed my mind that people would use a cutting board made from glass in the kitchen. Just thinking about the scratching and clanking of steel on glass, and the resultant dull knives that I'd be left with makes me cringe. No thanks.

Where To Find Venison

I used to live like half a block away from that place. I'm really looking for meat to prepare myself, but I'll have to watch out for the venison next time I'm at Gingergrass. I like their Banana Leaf Fish.

That's pretty similar to how I prepared it last night. Twas delicious, but I'm curious now about the flavor without the cream.

Do any of you experiment with adding other things to your sauce like peas or mushrooms for instance, or do you think it's best kept pure and simple?

Pasta Carbonara

I just made some for dinner and was curious about the proportions of egg yolk to cream to parmesan people are generally using. I did four yolks : 1/2 cup cream : ~1 generous cup of cheese. It turned out pretty good, but I've come across a lot of various different spins and was wondering if any of you out on the Internets had come to any consensus.

Thanks for the suggestions! My home base is the Silverlake / Echo Park area of Los Angeles, but I'm home in Mission Viejo for the holidays right now. Maybe I'll make a trip up to ABS for some provisions. Of course now I'm curious about what zebra meat would taste like...

Quality Smaller Markets in Echo Park/Silverlake?

Basically I'm trying to find a decent butcher and fishmonger in the Echo Park / Silverlake area (maybe with a 5 - 10 mile radius). I don't like the quality at the supermarkets around here and would love to find someplace smaller to support that can offer a better product without the premium that WholeFoods would charge. They don't really know what the hell they're talking about half the time anyway, so it'd be great to find nice small niche markets where I could satisfy my culinary needs. A place with decent veg variety (or where I can buy whole vanilla beans for cheaper than $11 a pair) would be wonderful as well.

Anybody have suggestions?
