Good home blender?

I got a Ninja 5 months ago and really like it. It has two blades at different levels, so it chops very evenly and the power is great too. I got mine from Target for about $45, and was pleasantly surprised that it came with two sets of bowls and blades (for big and small jobs). Couldn't be happier.

Where to find Niederegger Marzipan in bay area?

We found them in Cost Plus indeed, I would never have thought checking out there! They say they carry them all the time. Now we are very happy we can have a constant supply of the Marzipan :) Thank you!

Why do my toll house cookies deflat once out of the oven?

It is funny I spent years trying to figure out why my chocolate chip cookies never spread in the oven. I tried many recipes, different ovens, 3 different cities over 10 years and finally I found out that my cookies did not spread because I never bothered to cream sugar and butter enough. Since you have the opposite problem, I would suggest that you simply mix butter and sugar instead of creaming them and I am pretty sure your cookies won't be flat.

Yes. But please make sure ALL parts of turkey is cooked to 165 degree F. Check multiple locations (thigh, breast, etc.) If there were any bacteria in turkey and grew during the time your oven was off, another round of cooking should kill them.

Where to get Buddha brand of jasmine rice in Berkeley/east bay?

I had some jasmine rice at a restaurant recently and loved it. I asked the waiter and he said it is Buddha brand. Ever since then, I have been looking for it locally, but I have had no luck at stores including Berkeley Bowl, Ranch 99, Andronico's, Safeway, TJ, Mi Tierra and a number of others. We just had brunch at Navio at Ritz half moon bay on Easter Sunday. It was beautiful there and the food was great. I did not check the price before hand, so I was surprised when the check came in at $125/person instead of $88/person as I expected. I wonder if anyone knows if the food on Easter Sunday brunch is different, or it is more expensive just because it is Easter?

diary-free sponge cake recipe

I am looking for a basic yellow sponge cake recipe that I can use for layer cakes. I like it to be soft, with tight crumbs and ideally does not dry out easily (something like sponge cake from Asian bakeries). I can't use diary products, or any vegan diary substitutes because of my kids' allergies, otherwise I can pretty much use anything (butter, flour, eggs, etc). Any suggestions would be greatly appreciated!

best dark roast coffee beans in Berkeley / Oakland area

I like coffee beans from the Country cheese store (next to Monterey market). It is an unpretentious little store with an amazing collection of coffe beans, tea, spices, and most of all chocolates. They have the best prices for most items too. Don't know about what kind of roast they have for coffee beans though.

Crème brûlée at La Bedaine in Albany

I go to La Bedaine regularly, and everything I have had there has been wonderful. With that said, I was blown away by their Crème brûlée a few days ago. The chef cameralized sugar fresh on the spot, and it really made a Crème brûlée fan out of me. It has a delicate texture, just the right balance of sweetness and creaminess, and a touch of cinamon (I think) that made it totally irresistable.

Waterlogged frozen fish?

I throw frozen fish in frying pan with nothing else to "pre-cook". Once the fish starts to cook and water comes out, I pour out all the water, and then start the real cooking by adding oil, spice, salt, sauce or anything you like.

Lemon menrigue pie recipe

My daughters have been asking for lemon menrigue pie. The lemon menrigue pies I have ever eaten are usually very sweet, and I don't want to go to all the trouble making it if it would turn out overly sweet with a metal taste of lemon (could be just me). I wonder if anyone knows of a good lemon menrigue pie recipe that is not too sweet. Thanks!

Desperately Looking For Good Chinese Restaurants in East Bay

We ordered steamed frog legs, octopus salad, a clay pot (lamb, I think) and a fish dish I don't recall. I was pleasantly surprised that I liked all dishes, which had never happened to me at east bay Chinese restaurants. All the ingredients were fresh, the service was fast, and all dishes came up nice and hot. (except salad of course). Right now this is the only Chinese restaurant in the east bay that I actually WANT to go back to. It could be a one-time wonder, but I hope not. Judging by the large number of native Chinese diners there, I think it is promising.

I have a hard time finding a Chinese restaurant I want to go because most serve food that is gooey, sweet, greasy, and sometimes not as fresh as I would like. I pretty much have tried every Chinese restaurant discussed on this board, and Chinese Village is the only one that I would return. With that said, I had a really good meal recently at the newly re-opened "Saigon Village" next to Ranch 99 in El cerrito. The food was fresh, lightly flavored and the service was very efficient.

After trying all different brands of eggs (Judy's, Eddies, Rock islands, Costo, TJ, farmers markets etc), my conclusion is that the Eggland's best eggs are the best indeed. They are from $3.99/dozen at Safeway to $2.44 at Target (Albany) - same eggs. For myself, I don't think $8/dozen FM eggs taste any better, but supporting sustainable agriculture is always good.

My kids are alergic to dairy, so I have been looking forever for a substitute for cheese for cooking (such as mac and cheese, pizza, etc). They can't have commercial cheese substitutes either because of the thickening agents used in them (such as carrageenan, and others). Recently I have heard about a vegan cheese recipe using fat and nutritional yeast. Has anyone here tried that, and where do you find nutritional yeast around Berkeley?
