Chocolate Soufflé

When you fold in the meringue, do you have to have it so that you no longer see little clumps of the meringue? or are little bitty specs okay? Does the batter have to be refrigerated before baking? or can you bake it immediately? Thanks. I am a novice at this...but it sounds so yummy!
