Basic Potato Salad

The best thing I've ever done to improve my potato salad is to toss them with some vinegar while they're still warm before adding the dressing. It's a technique from Cooks Illustrated and really brings out the potato flavour.

Brining beans? Yes!

I tied CI's red beans & rice recipe which includes the brining step and I have to say they were fantastic. Exceptionally creamy and the skins were so tender. The beans stayed in the brine for nearly 18 hours with no adverse (re: gassy) effects. Harold McGee agrees with CI, too:
