Emeril's NOLA or Emeril's New Orleans- Which is better?
I think it has a lot to do with the location...trust me...the food is good...everything is house made/cured/baked and it's all top of the line ingredients
the real problem is that on a friday or sat they do 3 or 4 hundred covers (really)and it's tough to excecute to perfection with that kind of turnover
try lunch or earlier in the evening/week for the best service and attention to detail
I really like the stuffed wings, oyster roast and the duck...whatever you decide, please review so we get an updated review

the dessert menus at all three restos change seasonally but there are standards that will always remain (banana cream pie, drunken monkey ice cream, bananas foster)
the dinner menus seem to remain full of the standards and specials rotate daily...I heard the fixed price summer menus are doing well ~
you can always hit NOLA for lunch then Emeril's for dinner and compare for yourself

as a former employee of both...if you want the BC for dessert call ahead a day or two, ask for the bakery or a manager and they will make sure a banana cream pie gets to NOLA for you.....both the pie and pudding cake are great

elegant/sexy apps I've used that work well passed or stationed are:
endive spears topped with a slice of seared duck breast and a few drops of of mango or orange gastrique (could sub a fruited honey or chutney)
baby potatoes stuffed with creme fraiche and topped with caviar (domestic is fine for this preparation)
tuna tartar on toasted pita triangles drizzled with coriander/chili oil
I have tons in this vein...let me know if you need more or if there is a particular ingredient you want to use
Trip Report from 07/30-08/03 Day 1 and 2
Just a note on the food at the RC...I am continually surprised by how good everything is at Melange, On Trois & the Library. I try to take advantage of the spa as often as possible and usually wind up at one of the three for lunch & drinks. I've had great burgers, steak sandwiches, sushi and a killer gumbo sampler.
Can be a bit pricy but definately good hotel food.
Week in Review 7-31 to 8/7- Fairly long
yummmm...heading home in 4 days....first stop Tony Luke's, second is PRIMOS! Miss those subs desperately.
I love that Nap House bruschetta- you're right- it's just like a french bread pizza w/pesto.
Just a suggestion for next time, try taking one of your fancy meals at the New Orleans School of Cooking. Little pricey but well worth the $$...it's entertaining, informative, full of drinks and delicious.

just about everything, I guess. I cannot tolerate the obnoxious drivers and the 1/2 assed history lessons, the traffic jam ups, the stinky mess that is constantly in the middle of the street or the 6 seater carriages that have only 1 mule pulling them in August - it's just not for me

definately for dinner and I prefer to sit at the bar ~ the dining room seems too close/crowded for me ~ plus the bar service is top notch
if the spanish style bbq shrimp are on the menu they are fantastic...the 5 hour pork is also great

There are great dishes at all of Emeril's restos. Would one bad experience at Brennans stop you from going to every Brennans restaurant?
It's a fact of life here in New Orleans that visitors will want to do something touristy. Personally, I thank god someone's PR firm is hitting the right buttons. Before I lived here I must have made my friends crazy. Every trip I dragged them to Brennans, Arnauds and Pat Os. Just be thankful they're not insisting you join them on one of those hideous carriage rides thru the quarter. (I draw the line on that one).
Anyone being honest will tell you that Emeril is a talented chef and truly cares about New Orleans. No way would I write off his restos because of one bad experience.

I was there the other night and I just do not like the whole set up...the bartender can take your drink order and you can pay her for the food but she won't take your food order...you have to get up and walk around a pool table to find the guy who is cooking/serving the food
so after I get an explanation of this the bartender tells me that J'anitas is good but if I still want regular bar food then I can order mini tacos and stuff from her bar menu
OK...so I decide on guac (which was fantastic- chips were fresh but a little too greasy) and I ask my husband to order...he gets up and wanders around for 5 minutes in the general direction that the bartender points and tries to figure out who takes the order...finally I asked a guy playing pool who is doing J's food and it was him (I just got lucky)
how the hell that is supposed to work I have no idea...put on a J'anita's tshirt or an apron or something indicating that aside from playing pool you can get me some salsa....crazy

I went to the RO the other day to try to catch a drink and they have a SECURITY gate up now!! you need a room card/key to get into the pool area

yep, I worked the vip afterparty at the cac last year and it was a mob scene...they ordered hors for 500 and every last bit was eaten up...Stiletto vodka sponsored that one and there were martini's aplenty

I have always suspected that Rutgers released the named varieties in order to draw attention to their horticulture department and NJ Fresh jumped on board to promote tomato sales ~ I'm not a tomato consipracy theorist or anything...I just like the facts, please!

not trying to get into a holy tomato war here, but please do not let the Rutgers/NJ Fresh webinfo give you the wrong idea... I do not search for anything called Ramapo or Rutgers when I go tomato picking ~
for me it's the soil not the seed
my favorite farm in SJ is using heirloom seeds called big russia roma and bloody butcher (last year anyway) they tell me the sandy soil/excellent drainage provides just enough water to grow without the fruit taste being diluted
for me, Creoles do not taste of the sun when I take a bite...they are not sharp/sweet tomatoey and that's what I'm looking for
it's kind of like the first time you go to Italy or Greece and eat veggies - words like verdant and lusty come to my mind...that's how I want my tomatoes to taste, regardless of where they are grown

worked it...turned about 150 covers which I thought was fairly large for the 4th...
drinking an albarino as it's still 88 outside and it felt like a refreshing choice

had the new santa fe guac and queso a few weeks back...guac ok but not outstanding ~ queso was surely melted velveeta with salsa mixed in...the worst I've had in a while
I can report that the margaritas were very good and I loved the avocado vinaigrette

husband works at harrahs so we spend a lot of time on/near fulton...I always find myself stopping at ernst for a drink/sandwich and I've yet to be disappointed
fairly underrated spot I'd say ~ plus free crawfish with an abita pitcher isn't a bad way to spend a weds night!
French Quarter Festival question..
personally, I wouldn't cancel for FQF weekend...I didn't do one day of JF this year but I spent the entire weekend in the quarter for FQF...it's a better fit for me...plus I'll be the first to say that I prefer the food at FQF (gasp!!)
how many days are you staying? if it was my trip I would book a day or two before or after the fest so you can enjoy the restaurants without crowd worries and still take full advantage of the free music
plus you have plenty of time to find that perfect spot to stay...

thanks for that link...I thought I was the only one still doing cod that way...sometimes in honor of my grandmother I'll use cannd sliced white potatoes (this is the only acceptable use for those) and a can of stewed tomatoes...dot w/butter and/or breadcrumbs and bake til browned
really, though...any fish that has been frozen and might be a bit watery benefits from the baked w/potatoes treatment

I have to agree with the avoiding the Hilton and going to Metry....the oysters at the Hilton Drago's are horrible...not sure why but there is something missing...

What Constitutes a Good CT Clam Chowder?
it's funny you mention CT because I found my favorite chowder in Mystic about 3 years ago...
I was on a quest to sample chowder from each New England region...I found they got thinner as we drove north. We stopped in a little bar/pub in Mystic and ordered a bowl - it was fairly thin and thyme scented. I thought I liked the thick potatoey stuff but the Mystic bowl was the best ever.
It's officially brutally hot here but I'm going clam shopping tomorrow...chowder on Sunday!!

I think the biggest contributing factor to me realizing I was in a rut was all of the "first timer" posts on the forum. People are so excited about trying everything the City has to offer...I wanna be them for a day! (guess there are worse problems!!)
