ROAST CHICKEN! Home Cooking Dish of the Month (March 2015)

Though I spatchcock for the grill I prefer a whole bird for oven roasting.
I salt and pepper the bird, put a half lemon inside. Heat an iron skillet in a 450 oven.
Rub bird with olive oil or coconut oil, put in hot pan.
Roast for 50 minutes, check temp. Looking for 165.
Usually takes about 55 minutes for 3.5 lb bird .
Perfect every time.

vegan streusel recipes

I use oats, spelt flour, coconut oil, coco Palm sugar, which has more flavor than regular brown sugar, cinnamon and cardamom. Also both sea salt, and my secret ingredient, a grind of black pepper, which livens it up in a subtle way.
I love nuts but not in streusel.

V+V dinners, boreal winter, austral summer

We are in Tucson escaping the demonic winter and so I went to the farmers market today and bought the makings for a roasted poblano frittata. Also made from there a citrus salad with five kinds of oranges, grapefruit and a dandy little new to me fruit called a limequat.
There were all from an organic grower right here.

Didn't use it in dinner but also scored a mesquite smoked olive oil which is to die for.

Would you make the risotto ahead of time?

I don't stir constantly but very frequently as I like to see just when more stock can be added. I don't drink but I think I could drink and stir at the same time.
With prep I allow a half hour, depending on the type of risotto, of course.

Just a thought: grains like barley , farro, wheatberries , or even rice make much better salads and hold better IMO.

Dinner ideas for a family with food restrictions!

Roast a duck and serve with puréed celeriac and turnips.

I wonder how accurately you are measuring your flour, because mine is never dry even with a cup of whole wheat flour subbed in.

Your breakfast is all carbs, not a great way for a lot of people to start the day.
