How long to cook a 25-lb turkey?

A rule of thumb is 20 minutes per pound if stuffed, but I find they cook faster, especially if you start them off as I do in a hot oven. I would start checking at 5 hours .

vegan problem - fat cravings

I don't know if you are aware that many people think that coconut oil is a very healthy fat.
( I learned this first from my cardiologist, by the way)
If you are not aware of this do read up, because you might be able to satisfy your fat craving this way.
If not , just ignore me;)

Turnips for Thanksgiving

I would leave it for guests to decide whether to modish them. In my family we love the pure turnip taste .

Alternatively I would steam and mash roughly with butter and lots of salt and pepper.

Thanksgiving with Ottolenghi sides?

Yes I definitely misjudged the tahini. Also should have used toasted tahini.

Make ahead (or prep ahead) Brussels sprouts for Thanksgiving not at my home?

We like shredded sprouts sautéed in butter with hazelnuts. Can shred ahead and sautée there, it only takes about 7 minutes and they are delicious.

Sweet and sour red cabbage... question about ingredients

I don't know about necessary but I like cabbage, red onion, apple cider , vinegar, and apples or prunes.
The length of time you cook depends on how soft you like the cabbage. We like a little tooth so we slice more thickly and cook about an hour.

Thanksgiving with Ottolenghi sides?

I think it just needs spicing up a bit. I would use toasted cumin and black sesame seeds seeds around the edge and also cumin in the actual thing.

Do you make cashew cream? It is wonderful inn soups and sauces.
Peanut or almond butter are good bases for pasta sauces. Toasted walnuts are great in stuffed squashes, in pumpkin ravioli.
Nuts are great in pilafs, in oatmeal, in rice or other grains. Sesame seeds are great on top of stir fries or steamed vegetables.

Flourless chocolate cream pie recipes

I am not aware of the filling ever having flour, so are you talking about crust?
An almond flour or nut crust crust will work, but I might be inclined to just make individual puddings in wine glases or teacups .

Thanksgiving with Ottolenghi sides?

I tried this recipe ( I am mad for Ottoleghi generally) and found the tahini much too prominent .

Corn chowder for Thanksgiving?

I dislike the super sweet hybrids too, no corn taste. But I don't buy those. We still have many farmers growing the real thing, thank goodness and the corniness is prominent.

Fermented vegetables, particularly mushrooms

I am on a fermented veg kick for reasons of both deliciousness and probiotics. I see recipes for fermenting dried mushrooms( mostly shitake caps) and then treating them with different " meaty " flavor profiles. I am curious if any of you have experience with these.

I was at a similar one. There is a huge revival of heirloom apples in both NH and Vt and a few well known speakers about them.
They just have a different opinion than you, ok?

apple pie no cinnamon

No, his point is that with more varieties if heritage apples you don't need any spice. Or at least that was the view of a vermont orchard owner who grows 100 varieties of the most amazing apples I have ever tasted.
