Ottolenghi has a lot of meatball recipes. One that comes to mind is in a tahini sauce.

If you use white meat turkey ground it will be too dry IMO. Dark meat works much bbetter

Tomato and egg curry is delicious especially with coconut milk.

Do you like cherry tomatoes skewered and grilled with other veg( mushrooms, squash, eggplant) or tofu or tempeh?

How about green beans slow braised in veg stock with onions , garlic and tomatoes( 4:1 beans to tomatoes )?

If things are burning on the outside and not cooking inside you are cooking over too much heat.
I use one large or extra large egg to each medium squash, so you could try more egg. Cook over medium low heat.

Freezing Cooked Maine Lobster

It will do for soup but will lose some texture. I have not found freezing in salt water to help.
By the way, try fish or veg stock, or even clam juice instead of chicken stock which IMO overwhelms the lobster.

Substitute for dried porcini.

Or just anchovies.

3oz dried is about a cup of fresh, but don't expect the depth of flavor you get from dried .

I took the suggestion of a friend on another board to add Harissa to the sauce. It was a great addition. Non vegans ate yogurt on top.

We continue with our stuffed pepper obsession, not sure what it is about except the peppers are particularly gorgeous this year.
Today's version:
Slightly mashed chickpeas, bulgur, carrots, and onions with Moroccan spices in purple peppers and a fresh tomato sauce with cumin.
I am hoping that the colors as well as the flavors will be fabulous.

I bought some not great peaches:( but sautéed in butter with cinnamon and a bit of cider syrup they will suffice. Maybe I will try them in coconut oil, actually, and keep it all vegan.

We just confine our tomato eating to summer, or to tomatoes we have roasted and frozen. Or canned.

I am making another batch of peppers tomorrow, taking off on the chick pea idea but using some bulgur and some carrots. Will keep it vegan with a simple fresh cumin scented tomato sauce.
Hope to freeze some but we keep eating them all!

This cake is intended to be very rich and looks delicious. Why add more sugar to replace oil?
If you want a less rich cake, use a different recipe.
