I actually think the opposite, that nutritional issues are often overlooked by doctors.

Are you THE cook in your family?

There are just the two of us now, I am more experimental and need more variety( and more meat, lol) , but I think what we turn out is pretty equal in quality. Neither one of us is an amazing cook, but we both care about good ingredients which are as fresh as possible.
My wife makes much more interesting salads than I; I am the grill mistress.

Some hospitals. Some are nothing short of disgusting. I would not count on that.
I would see if there is a grocery store with a decent take out section. Almost everybody has rotisserie chicken and sides which are edible.

There are so many more kinds of beans available than one can find in a can and they taste so much better.
I use canned beans the way I use frozen veg, which is in a pinch .

V+V Diners Spring into Summer!

Last night we went to a vegetarian potluck and we brought the roasted cauliflower with grapes, raisins, hazelnuts and cheddar from More Plenty. It was a huge hit and very easy. I used spinach instead of parsley because we had some grown locally.
Although the cheese is good in it, I think it could easily be left out or served on the side where there are vegans present.

Tonight, more Ottolenghis.
Quinoa and ramps patties and roasted honeyed carrots with tahini sauce.
We are omnis who eat a good number of vegetarian meals, and this book has been a source of inspiration.

Yes, thst is the general method for fermenting vegetables, and it works. To have that much ramps in that much brine you would have to cut them quite small, like you do for sauerkraut. They should be very tightly packed also.

What's the best plain oil for popping corn?

I pop it in my own brown bag and the add butter or coconut oil for flavor. It pops up beautifully, no pot to wash.
