Pre-1980 authentic US Sichuan cookbooks?

I like, and sometimes use "The Fine Art of Chinese Cooking" by Lee Su Jan. It includes recipes from all the major regions, including Sichuan.

What do you make that is SOOO easy yet you impress yourself every time you make it?

Pressure cooker pot roast. Just throw everything in (chopped onion, carrots, garlic, celery, chuck roast, pepper, some water) and let it go for 45 min to an hour. Like magic.
