Great Chicken Parmesan or Lasagna in Buffalo NY?

Frank's Sunny Italy - huge portions, expect it to be busy on fri & sat
Santasiero's - get the pasta fagiole, too
Romeo & Juliet's - great desserts here, too

Just to be sure, you want Italian-AMERICAN, not Regional ITALIAN cooking, right?

Can you freeze canned tomatoes?

I've bought those big restaurant sized cans before, and then opened them up, and divided them into smaller portions to freeze. I freeze tomatoes all the time , no problem.

ISO easy delicious pasta recipe

Sounds good and easy, but a little bit of onion powder, some dried oregano and basil from the pantry, and a shot or two of red or white wine, and THEN you're cooking!

Anywhere in Buffalo where I can find fried clams?

You took the words out of my mouth. I was thinking the same thing. Maybe raw clams in the summer time, Cecelia's has a nice clam bar on the patio in the summer, but that's about it.
LaMarina on Hertel is good for seafood, not sure if they have fried clams though.

The Best Beef-On-Weck in Buffalo

I like Andersons, and I'm not afraid to say it. I'm not much of a beer drinker, so that doesn't bother me. I usually get a milkshake with my order of weck and fries.
Then I go get my cholesterol checked.

Sara Moulton Chicken Stock

No, I think garlic is a very personal decision. I add a lot of garlic to everything, but would never put it directly in my stock. If I was making a recipe with the chicken stock that required garlic, I would add it to the recipe as I was putting it together.
I think chicken stock benefits from celery onion and carrot, with a bay leaf, some sage, and plenty of salt.

Canned Tomatoes/ Spaghetti Sauce?

Yes, Pomi tomatoes in a paper box, similar to the kind that milk comes in.

I like Newman's own sauce, comes in a glass mason jar that you can re-use. Though I always doctor it up with more basil and garlic!

Vday dinner for 6 in Amherst/Buffalo/Niagara

I went to Zillycakes for their cupcake bar - I was very underwhelmed.
They seem to be mostly a custom cake decorating business and the cupcake bar is more of an afterthought. On the day I was there, there were no cupcakes on display, (they bring them out of storage, when you order them so they are always fresh, can't say I blame them) and they had two frosting choices, for $3 a cupcake.
Gummis and other decorations were an additional charge, which might be fun, and expensive, if you had kids in tow, which I didn't.
As a "gourmet cupcake destination" it kind of failed. I don't think there is enough business in Buffalo to support a cupcake bar of the caliber of Magnolia, though I suppose Wegmans, with their deep pockets, could do it if they had the will.

Pizza in Buffalo (split from Ontario board)

Yes, the sicilian at Mr Pizza is fantastic, though I usually get mine with sweet peppers.
I'm surprised that no one has mentioned Zeti's , a really popular new pizzeria at Main and Kenmore, though I suppose they are known more for their NY style pizza.

Wrapping meat in plastic wrap, to oven roast

"If you've eaten in a restaurant, you've had food wrapped in plastic, then foil."

I've eaten in a restaurant before.
And I may have had food wrapped in plastic and cooked in an oven.
... And maybe a bug or two in my salad..
...And maybe some sand in my leeks...
...And maybe eaten something that had previously been dropped on the floor...

But I am not going to try and duplicate that at home.

Riesling recommendation?

"New York rieslings are next to impossible to find on the west coast. I've been looking for Finger Lakes rieslings for two years and have never found one."

I find it odd that Finger Lakes Rieslings would be so hard to find on the West Coast, and yet you can find plenty of German Rieslings?
Pinot Noir just doesn't come from France. Here in NY state stores we can find plenty of top quality WA, OR, and CA pinots on the shelf.
I think it boils down to the fact that West Coast people are not asking for NY state wines when they go to their stores. Perhaps they are spoiled from having so many good West Coast wines to choose from, and cold weather grapes like reisling get lost in the shuffle.
Finger Lakes, and Niagara, Rieslings can go right up and even surpass the German counterparts. And I think Niagara Icewines are better too. And at half the price.
When I was in Napa I was surprised that many of the wine pourers had never had Icewine, like it was some exotic thing from Europe...

I highly recommend Wiemer and Dr. Franks rieslings. Ask for them at your store.

Buffalo style wings - Tabasco or Frank's Hot Sauce?

Just so you know, authentic Buffalo style wing sauce is one half Frank's and one half melted butter ( not margarine)
This makes a hot sauce. To get it more mild add more butter, but to get it more hot, add ground cayenne pepper, not more Frank's. I'm not sure why that is.
Some places add more white vinegar to their sauce too, but I don't. I think it throws off the balance.

Jerry, you forgot to mention Restaurante Lombardo on Hertel, which I think has the best Italian in Buffalo. Well, Sinatra's too, but it is pricier.
LaMarina is very good too, for fresh seafood.

But I agree about Romeo and Juliet's!!! I am pretty sure the owners are from Italy - Sicily, I think.

Diners in Buffalo, NY

I agree that diners in Buffalo used to be all Greek, but I think it is becoming less so.
My favorite diner is still Kostas on Hertel , the rice pudding is to die for!
Is the Towne on Allen considered a diner?
I really don't know where to draw the line between diner and "family restaurant"
