As an additional short information on my trip, I also visited the Tim Ho Wan in IFC but have to say that being more expensive, it lacks the final finesse of the original locations food.
And the Sunday brunch in the Conrads was very nice, good food, especially the seared good foie grass and the dessert buffet. And a very nice view from the Niccolinis section, where I got a window table.

Well, I finally found the time to give my review and present the photos of the dishes. Basically, PhilD has done a good deal of the work already with the listing of the courses, which were very well prepared and presented. My personal favorites where the starter plate (especially the suckling pig), the stir fried diced wagyu, the boneless chicken and the very well presented dessert plate. The birds nest soup was also very well done.
Special kudos go to the "wine guy", very knowledgeable and well traveled (he even had three wines from Austria in his wine room).
And the chinese wine was also very interesting for me, as I didn't taste it before. What was this again exactly?

I think that some sticky posts would be good, where there is a continually updated list of best restaurants in "add city here" for "add food and kitchen style here". When I started on this board I also found it very hard to find compact information through the search engine.

As soon as I catched up with work here back home I will post up my review along with the photos I made. Overall, it was a very nice evening with great company, hope we can do this again soon!

Sorry to hear that. Sure, Wildfire was no "triple-A" restaurant, but the meals I had there were quite good. Nothing compared to other food you can get in HK in the City, but good for an airport.

If there is good dim sum at the restricted area I haven't found it. When I have to eat at the restricted area of the HK-airport I prefer the Wildfire, their siskebab is quite good.

I want to put the finishing touches for this meet, so if there are no comments by the other chowmeeters until Tuesday about the venue I will start to arrange for the menu at Ming Court!

One thing if we choose Ming Court: I got an offer through a friend that, if we choose this place, we could arrange for a special Menu or chinese food / wine pairing dinner.

So as basically everyone is available at both days why not make two chowmeets. ;)
But back to serious: I would like to make the chowmeet on Friday, so now on to choose the Restaurant. My suggestions would be:

Vegetarianism in China...
I doubt that many kitchens will really use diferent utensils and pots for Vegetarian anywhere in the world. Most cooks will not see a problem using the same pan they used for meat when they prepare a vegetarian meal, as it has been washed (or should have been). Most will just say "yes, of course" and still use the same utensils.
But regarding the ingredients I think that all restaurants will respect your wish to not have meat in your meal if you talk to them in a serious and nice way.

Regarding the Lei See to waiters and captains, also interesting to read and a good concept if you visit the same restaurant more often. This way, the waiter will remember you as the guy who gave a "big" amount at New Year rather than the guy who gives a little every time. I can see how this could improve the service one receives. (here in Austria it would now be conisdered a bribe and would endanger the job of the waiter and could produce big problems with the government)

It seems like we could get a big table together after all. So, to make a decision on the date, I would like to suggest eiter the 22nd of March, a Thursday, or 23rd, Friday. So please tell who would be up for which date.

Both in China and in HK I have never seen a Chinese giving a real tip to the waiter. Maybe leaving behind the odd change, but even that very seldom.
Also, every travel book about HK that I have read in the past years stated clearly not to tip, as it is not customary.

From the photo I would say that the waiter held the plate in a light angle, so that the pineapple moved to the side.
Also nice to read that PhilD liked the Markowitsch Pinot Noir. The Markowitsch wineries (there are 3, all owners related to another) are just 30 minutes from my home and I have wines from them sometimes in my Restaurant. They produce some really good wine and it is nice to read that they have advanced as far as a HK 2-Star!
