Chinese Birthday Feast

Thanks everybody for your input. Unfortunately the date and time are not flexible, we dine Friday the 12th at 8pm. I will update later tonight with the full menu offered by the restaurant. I'm still hoping for a few more specific suggestions. We have already settled on:

Fresh abalone stir fried with chinese ham.
Crispy Squab.
Garlic-fried lobster.

We should end up with 8-10 dishes. Will update more later...

Chinese Birthday Feast

We are a caucasian family celebrating a birthday this Friday night. We love food and are looking for a memorable meal and are prepared to venture to Markham/Richmond Hill so that we can get the good stuff. After consulting CH I decided to book at Emperor on Bayview Ave. We asked for a private room to accomodate about 10 of us, and were told that as it is Chinease New Year, there would be a minimum charge of $800-$1000. Now the manager wants to put together a menu with me. There is a slight language barrier, and I have never put together a banquet menu at a chinease restaurant so I have a couple of questions:

Should I expect to pay a per person price or a per dish price?

I am pretty excited about this meal, but I need confirmation that Emperor is a good choice. Also the minimum charge seems a little high- is this normal? Is there a big advantage to a private room vs. the regular dining room?

Is there anything I should insist on having or avoid? We are all adventurous eaters but we won't eat shark fin and would probably not enjoy chilled monkey brains or anything with jellyfish.

Can I/should I BYO? How much might corkage be?

Any other advice would be welcome.
