Dacor makes an excellent product. I have two of the ovens you mentioned in my kitchen. Wolf also makes an excellent product. Electrolux is not in the same class.
With a single oven a convection microwave is almost a must. It gives you a second, although much smaller, oven.
Warming drawers are an excellent addition to almost any kitchen. Some also serve as slow cookers as well.

microwave drawer advice?
Microwave drawers are the only way to go when installing below counter top level. The drawers open and close on their own at the touch of a button---no spilling.

Perhaps you would be so kind as to name those restaurants. I would like to stop in some time and get their thoughts directly.

Induction will not warm your house when the power fails. I don't know of one restaurant (where the professionals work) that has switched to induction. There is something to be said for induction. You can boil water in about 30 seconds. If you boil water on gas or standard electric and stand there waiting for it to boil, let's talk about multi-tasking.

There never was a repair issue with Dacor. The company tried a new servicing methodology and it went wrong. They've gone back to the tried and true method of servicing and all is well. I don't know of any "out of the ordingay" service issues with Wolf.

You're right. Sorry. Got it backwards. No 27" oven. My choice would be Wolf.

I have two Dacor 30" ovens in my kitchen. If I were replacing today, it would still be Dacor because Wolf does not make a 30" oven.

Here's my thought. In that price range, I'd opt first for Kitchen Aid, then Bosch and then I'd start looking again before I'd consider a Frigidaire.
Cold air down the ventilation
The Wolf hood comes with a damper that is installed between the hood and the duct work. When properly installed your hood is "double dampered". Perhaps some debris is holding the hood damper open. If your roof blower is installed with the opening facing the prevailing wind, then it is likely that you'll get some infiltration even with both dampers working properly.
