Need Cape Breton Help: Farmer's Markets or Good Food Shops

I live on Cape Breton Island, although not close to Margaree Forks. To get to your housekeeping cottages you will probably be taking the TransCanada 105 through Whycogamagh. There is a good speciality store here called The Farmers Daughter. Just before you come to the turnoff for The Cabot Trail, you will find an excellent deli called The Herring Choker. It is probably your best place to buy cheese and cold cuts and other goodies. Try their excellent bread, especially their porridge bread. Stock up as it would be too far to come back to this place from your cottage. You will be in a very rural area and any stores are few and far between.

Where to eat in Port Hawksbury, NS

The food at China King is of the chicken ball variety. I think their specialities are a bit more authentic. The Singapore Noodles are vegetarian and are very good. I would think a reasonable breakfast can be had at most restaurants. I can not suggest anyone in particular. the best beach would be Port Hood on Route 19. It is a favourite and the water will be warmer on the Northhumberland side rather than the Atlantic side of Cape Breton. If it is low tide it is a wonderplace to look for beach glass.

I hope I am not too late to help you out. Port Hawkesbury is not considered a culinary mecca. We do have a very good Chinese food restaurant called China King. We usually opt for the menu choices rather than the buffet which they serve every night and also at lunch time. We just find food is fresher and hotter off the menu. Their special dishes, both Scheswan and Cantonese are excellent. Another popular spot is Papas Pub and the Fleur de Lis , beside Scotiabank, always serves very fresh, not fried lunch items. We have no bakery in the town. Only Sobeys and Atlantic Superstore for baked goods. I forgot to add, if you like authentic corned beef and cabbage the place to go for a Thursday lunch is the Hearthstone Inn (motel) close to the causeway. The rest of their food is just so so. If you do not mind travelling a few kilometres, ( about 30 minutes from PH) try the Stuffing Box at the Dundee Marina on the Bras DÓr Lakes. It is a beautiful setting and the food is quite good.

Smoked whole brisket - covered in mold?

Hmmm...... I thought it was not a good idea to freeze smoked products. I think the freezing process makes them saltier and does not keep the true flavour of the products. Any other thoughts?

I am really upset at the loss of an almost whole smoked brisket. While in Montreal after Christmas I bought a whole smoked brisket from a deli. I was assured that would be no problem keeping it undefinetly, refrigerated and wrapped well in plastic wrap. I have been trying to use it sparingly for sandwiches . It has been so good up until today. I found the outside covered in a green mold.
What did I do wrong? Boo hoo!!!!

Did my convection oven kill my custards?

Since I am still getting used to my convection oven, I have a question. Should you use convection when baking popovers or yorkshire pudding?

Season for Fresh Tuna / Algarve

Does anyone know the time of year that fresh Tuna is available in fish markets in the Algarve? Also when is the best time to buy Sardines along this coast. I will be spending 6 weeks during March and April this year and would like to do alot of cooking myself.

Tea biscuits / oven temperature new oven

I have a recipe for tea biscuits which has always produced a light , high rising , biscuit. I have called it my never fail recipe, until now.
I have a new oven and the results are not the same. They are not rising nearly as high. I am using the same temperature (450 degrees) on regular bake mode.
Do you think this means my new oven temperature needs to be raised abit?

Also does anyone have good results using a convection bake cycle for tea biscuits?

Frozon lobster / is it ok to eat?

I just discovered a cooked in the shell lobster in my freezer. It has been there since May of this year. Should it still be ok? How I could have forgotton about it I will never know.

GE Profile bottom double oven question

I am considering purchasing a GE Profile convection double oven range. The 2nd oven is on the bottom, close to the floor. I know bottom is not the greatest, however I think I will just use it as I would use a toaster oven for small things and it can also be used as a warming oven at a low temperature.. My question is whether there are any installation considerations concerning heat and flooring. Is the bottom drawer oven well enough insulated to protect a wooden floor when the drawer is opened?

Chicken Pies With Pastry

Candy, what temperature would you bake them at? Also would you thaw them out before baking? I was thinking if they were left frozon the crust may be baked before the inside was heated through.

I am in the process of making chicken pies with pastry on the tops. I would like to freeze them.
Should I :
- bake them before freezing
- freeze and then bake

In either case should I thaw before baking or reheating and what temperature should be used .

Convection oven -steam on inside of oven glass

Randolph, I guess I did get this problem resolved . Since posting this query I had another problem (unrelated) with the stove and it was returned and replaced. As far as the steam issue was concerned I also had another problem along the same line. While opening the oven door there would be a sudden rush of steamy hot air which usually went onto my face, steaming up my glasses. Do you have this problem as well? My new range is a LG. I have neither of these steam related problems with this range. So I think it must be a design flaw with the Kenmore.

Convection roasting rack - do you use one?

How many convection oven users out there use a broiler pan and convection rack for roasting meat. Does it really prevent alot of grease spatter? I can see where it raises the meat up and allows the air to circulate more around the meat. But I am not sure how it prevents most grease spattering.

makingSense, I wouldn't have thought that it could be done either. I have used a razor scraper as suggested for a glasstop range and that doesn't touch it. It has to be inside the glass. If you are interested , here is a lnk to others who have had the same problem.ls.

I did use some mild soap and water to get excess spatter off the oven glass and door. I really think that he grease got into this space while doing the convection cycle and then really got baked on with the high heat of the self clean. Maybe the seal is faulty. I am going to call Sears where I bought it, but they are very tired of hearing from me. I have had it for less than a month, so it is under warranty. This is my third range since April this year. I really think I might be jinxed!!

Glad to hear that it is not just me. When you are roasting a piece of meat , do you use the broiler pan with the grid and a convection rack on top of this? This is what it suggests in my manual, but of course I didn't do it this way. When I roasted the pork I just put it in a regular roasting pan. Today I did a self-clean because I felt that it might be dangerous even with wiping it out. So now I have a new problem. After the self-cleaning I noticed that there was burnt on grease on the inside of the glass ( inbetween the glass and the oven door). It also looks really smeary on the glass.The only way to clean this would be to remove glass from door and get to the inside. I think this must have happened while doing the roasting. somehow it got in there. Needless to say I am not a happy camper right now. I think I am also going to post this message on the Appliance Forum at Garden.net and see what replies I get there. See you there Joe Blowe.

Convection roast / may be a silly question

I am very new at using a convection oven. Today I roasted a Leg of Pork using my usual method except using the convection roast cycle of my range. It turned out beautifully. Very juicy and lovely and brown on the outside. However the inside of my oven looks like a disaster. Grease spatter everywhere. I think I will have to self clean it tomorrow even though it did not need it before I cooked the roast. Is this what I have to expect to get a beautiful roast?

Cooking tiny potatoes ... tonight.

AnnieG . I tried this way of roasting some new potatoes tonight for dinner. They are fantastic. I did them in my convection oven set at 375 and they came so crispy and delicious. I didn't have to use the broiler.

I'd like to jazz up some white rice

One of my favourite and easy ways to liven up white rice is to cook it in chicken boulion instead of just water. When the rice is cooked add abit of butter, finely diced white onion or shallots, a pressed garlic clove , a squeeze of lemon juice and finely shredded raw carrot. I guess you might call it some kind of pilaf. Yummy good!

Paderno Pots /how to clean bottoms

I have two different types of Paderno pots. The ones that I have trouble cleaning the bottoms are made by Paderno in Prince Edward Island, Canada. They are the line called Pots For Eternity and are available as sets or sold individually. The bottoms are advertised as having a heat conductive bottom pad.

The other pots I have are only sold as a set. Set is called Providence and they are advertised as having an encapsulated Pro Tech bottom pad and are recommended for any type of rangetop. I was told this line of pots are being made for Paderno in Indonesia. They are cheaper than the Pots For Eternity line, but have the same high quality and 25 year warranty..

When I bought these, I had no idea that Paderno was also made in Italy and was superior to the Canadian product. Talk about pulling the wool over my eyes!
Btw, there is no stamp as to where mine are made anywhere on the pots.

Thanks Joe for the info on both forums. Today I found out about the product that you recommend and also that my Paderno pots (the ones with concentric ringed bottoms) which are made in Prince Edward Island Canada are not the best pots that Paderno makes. The other Paderno pots that I have ( with smooth bottoms) are apparently made in Indonesia. Who would have known that there are so many Paderno pots. How misleading!

Candy, I think the problem is that I can't get inbetween the rings. I am not sure whether the brown stuff is grunge or maybe discolouration of the aluminum. Now that I have someone who has Paderno pots, I would like to ask you a question. I have both types. The ones with concentric rings on bottoms and also the ones with a pattern on the bottom. These latter ones have both aluminum and stainless showing. I guess I need to ask you first if you have a smoothtop range. If you do, do you have trouble with the pots marking the smoothtop surface? Mine always leave a brown ring and it is usually hard to get off , even with the cream cleaner.

I have some Paderno Pots ( Pots from Eternity line). I would like to know how to clean the bottoms of the pots. The bottoms are solid aluminum and have ridged concentric rings. I was told to use an oven cleaner, but the directions for Easy Off says not to use on aluminum. I have tried various aluminum cleaners and also SOS scouring pads and nothing touches the brown soiled areas.

Smoked paprika

I made breaded pork chops for dinner tonight. In the breadcrumbs I added abit of the smoked paprika. They were delicious! Just opening the tin and taking a whiff is a wonderful sensory experience! Do a search on Chowhounds for smoked paprika and you will find lots of ideas on how to use this product from Spain.

I was just in Pete's Frootique this morning and they carry spanish Hot smoked paprika and also Sweet smoked paprika. It is not located in the spice section. Ask a clerk in the grocery section and they will find it for you. Do you have a favourite way to use it? I bought 2 tins and I am not sure what to do with it.

Chinese Food in Port Hawkesbury, NS

I think at one time I mentioned China King in Port Hawkesbury. It is great! I prefer to order from the main menue but we usually get sucked into the buffet. The buffet is served from Wednesday until Sunday. If you order from the menue you can request no msg. Be sure to try their Hot pepper Squid. Ben the chef is quite an artist and he usually does this dish to perfection. Crispy Calamari served on a bed of shredded lettuce and fried onions. He uses other vegetables as fancy garnishes. Yum!

Does anyone know if the manufacturer Schott makes the smoothtop surface for Bosch ranges?
