Reliable, high quality, no-nonsense butchers

Max and Son's is now closed. The shop has been taken over by a couple of chef's. Its called Sanigans meat locker. An excellent selection of meat and poultry mostly from ontario farms.

Tried a Berkshire pork rack on the weekend. Excellent quality and flavour. by the way, none of it is marinated in anything, but they have a few tips and ideas for you if you're interested.

What is one tip that you learned about cooking that was simple but made a huge difference? [old]

Good pots and pans with a lousy stove, are better than a great stove with poor quality pots and pans.

Diamond Brand kosher salt. It is the salt used in most good kitchens. The texture is unique to that brand, you cannot substitute equal volumes of any other type of salt. Give it a try!

help me make chicken stock from a carcas

Place the carcass in a pot of cold water to cover.

Add 1 bay leaf, 1 thyme sprig, 6-8 parsley stems, 6 black peppercorns, 1 medium onion, cut in quarters, 1 stalk of celery, cut into 1" pieces, 1 medium carrot, peeled, and cut in 1" lengths.

Bring to a boil, immediately turn down to low, skim all fat and skum that comes to the surface. Simmer on low for at least 6 hrs. Occasionally skim any solids or skum that appear.

Strain into a clean container, chill, keep in refridgerator until needed. Will keep at least 4-5 days.
