It's hard to get good beef back ribs. Most of the time they strip the meat in between the ribs.If yours are meaty low and slow the way to go.Short ribs take a lot longer to Q Both in my opinion are great.BBQ beef ribs are underrated and if cooked right are way better than pork ribs.Again in my opinion |

This is how I make chili dogs.I like Nathens natural casing dogs.Cheap buns,with mustard.1 can tamales wrapers removed blended till smooth,Pour over dog ,top with onions some people like cheese too.I don't.Try it!!! |

Hard to mess them up.One thing that might be a little different is go to a good Asian market and buy a Chinese BBQ pork marinade mix about a buck .Make your own bbq pork .better than store bought and a lot of restaurants |

If It's a roaster I would brine and grill it.But I would cut the breast off leaving the wings on and start them 15-20 min after the hindquarters. |

In which I conquer (mostly) my fear of razor clams Living in the northwest digging razors is a family ritual and I feel blessed to able to enjoy them as well as dungeness crab.We put live clams in a bucket with cornmeal before removing from shell and rinsing.Cooked quickly in butter. |

I cook mine in a propane bullet smoker.I like St.Louis style ribs.I ruined several racks of ribs until I arrived at this method.If they are enhanced with a salt solution I don't use salt in my rub.Ribs on top rack,tray of water on bottom rack.I use hickory chips smoker set on temperature just high enough to make smoke.You should be able to do same way if your bbq has 2 burners.One burner set on low ,just enough to make smoke .Ribs on other side of grill over pan of water..Be patient.I smoke mine between 6 to 8 hours.Outside temp.effects how long it takes them to cook. |
