Kosher Mexican Cheese?
It's available at passover, but they have started to do a larger run then which then will last through most of the year. I've seen at stores with large kosher cheese selections.

If you look at the bun selection in most supermarkets, a dairy bun should be assumed at a restaurant unless it is explicitly a kosher restaurant.

I can't imagine why a treif restaurant would want to pay extra for kosher meat that they are about to treif up, but I guess you never know. If you're really curious I think you need to call and speak to the manager. I don't think you can trust any other hearsay and I doubt anyone on this board will know.
But if you find out that they have a source for kosher ham, please share what that source is with us.

Flying to Singapore
Airline food should be no problem. You may even be lucky and get Hermolis for the Tokyo to Singapore leg. As others have said there are 2 kosher restaurants in Singapore. You can also find a little food in the regular supermarkets. I've found lenders bagels and peanut butter imported from the US with hashgacha. Not a ton of options, but enough to pack a sandwich to have with you during the day.

For Parm, you can find Millers at your nearest kosher store. If you want real Parmigiano-Reggiano and read the the thread, you'd see that it won't be available for at least a year.

Prime Rib Roast for Shabbos?? Please Help!
Personally, I would rather not serve an overcooked roast because of Shabbat restrictions. I prefer to serve food that can hold well for Shabbat and save the roast for Yom Tov when you can cook it.

What do you mean by kit? Ingredients are milk + rennet and I doubt any kit would would milk. If you're looking for tools, then I'm not sure why they need to be kosher.
Best kosher lox in New York?
I was talking about the packaged at all of them. You'd have to go to a kosher store to get hand sliced. Of course, a lot of stores selling hand sliced are really just slicing acme. So you could buy a whole uncut filet from acme and slice it yourself. I believe Zabars makes their own, and what they hand slice is probably the same as the packaged that is sold with their name on it, but there is no hashgacha on the sliced area, so you'd have to decide if that is ok with you or not.

1) I'm fairly sure the Fairway lox is kosher. Check the package next time you're in the store.
2) Zabar's is definitely kosher.
3) Acme is the largest distributor for all over NY and they are kosher. You can buy direct from their warehouse in Brooklyn on Friday morning. Check their website for details.

It's probably still manufactured at a different plant. That plant may even be manufacturing something else that is not kosher. And that all assumes that there is nothing problematic in any of the ingredients.
If only kashrut was as simple as paying a rabbi to put a label on the box...

A question about cooking kosher meat
I'm not sure if it's the butcher, but remember brisket is not a primal cut of meat. It's possible that the cut you're buying for the kosher brisket is different than the cut you're buying for the non-kosher brisket. A different cut could result in the differences you're seeing.

Huh? So because they serve french fries in falafel in Israel, a restaurant in NY that is not serving falafel needs to serve french fries because guys who spent time in israel and are used to french fries in falafel will be a market for a pizza store without falafel?

Passover friendly NYC
Depends what you mean by friendly and how non-kosher you would go. Steak and potatoes is "passover friendly", as are most roast chicken recipes. In fact, lobster is "passover friendly" in that it contains no chametz, although it is clearly super-non kosher.
Without knowing what your standards are, all we can offer are certified kosher options. Also, as others have said, if you want non-kosher options your best bet is the general NY board.

Yes, the number per pound is the most important practical measure. Although on chol hamoed there is no reason you can't break off part of a matzah. But you were interested in using the count to measure thickness not to practically know how many whole matzahs you get.
If you cut the radius of the matzah in half, you can get 4 times as many matzahs in a pound with the same thickness. In fact, a % reduction in radius will have a larger impact on the count than the thickness of the matzah. So the question is, are you interested in the most matzahs per pound or the thinnest matzah?
