tastes kinda like a thick, concentrated soy sauce, but instead of fermented soy beans it's fermented grains and yeast, just like beer.
"umami" may be a bit complex for what we're talking about here.

szmollka, those are some wonderful ideas! wow.
chez nous it was always nothing fancy. I have been known to empty a fair amount of ketchup atop a heaping mound of kasha with bowties, liberally salt-and-peppered! ;)
