Roasted Cauliflower with Crispy Breadcrumbs and Golden Raisins

I have another easy recipe for Cauliflower,great for appetizer. Take Cauliflower florets several at a time,and put in a bowl that has four scrambled eggs<you could add a seasoning to the mixture<ie>Smoked paprika>efc.and coat Cauliflower,and fry in canola oil,until golden brown<cooks quickly>and remove when golden brown and sprinkle grating cheese <ie>Parmigiano,Grana Padano or even grated cheddar."Do not pre-cook Cauliflower"Enjoy P.Pinto

The Best Oyster Experience: Tomales Bay or Hog Island?

I have been to Hog Island Oyster,and all I can say is they have changed,from when I first went there with my family.They had round wooden tables outside,which was like eating in a boat yard,and the prices were reasonable,but the last time I went was not a pleasant experience.They wanted to charge me to eat there<outside>,and there prices went up considerably.it was no longer about enjoyment of eating Oysters,or clams,but it seems it is all about money!!

Old-School Italian Done Right at Sorella Caffe

It sounds like it might be worth the trip to see for myself,will it live up to the taste,and flavors of Italian Food?Coming from New York,in a Italian neighborhood,with dinghy little restaurants with great food.I know it may sound snobbish on my part,but forty eight years ago,when we came to Calif.in Orange County,there were no good Italian Restaurants,and so we started making all our own Italian Pastries,Pasta etc.I look forward to a visit to this Italian Food Restaurant Phil Pinto

Best Fried Chicken [Santa Rosa]

Recently I went to a new Restaurant in the North Bay called Sweet "T"s.This place makes Southern Cooking,that is worth the drive if you are going North. They make Catfish Po Boys,but the fried chicken is fabulous crispy on the outside,and moist on the inside,there friendly wait staff,and the owner is from South Carolina,so all there menu is really good. Tadich Grill or House of Prime Rib

To tell you the truth,I have never been to the House of Prime Rib,but my daughter practically dragged me to Tadich.My wife liked the Petrale soul ,I don't even remember what I ate,so I guess it wasn't that good,but what I did remember was the rude waiter we had ,it was like pulling teeth to get some more bread and coffee,and they just use their hands to brush you off,by a wave,like yeah I am busy .So to be honest with myself,I will try the Prime Rib next time I go to San Francisco. Homemade Ricotta Cheese

I have made this many times in the past,but the best and simplest is One Gallon of whole milk,and one quart of buttermilk<it has acid> Mix the two in a large pot that has been sterilized with boiling water,and also a non-reactive spoon.Place on burner,on high heat and bring to a temperature of 180 degrees.takes about 10 -15 minutes.When it reaches 180 degrees remove from heat ,and allow to cool for about 25 minutes.You should have approximately 3-4 lbs. of fresh Ricotta. For creamier Ricotta you can add a pint of heavy cream,or half=half.Enjoy. Phil Pinto

Diabetics are consumers too

I read many times ,wonderful recipes,but when it comes to desserts,there are few for Diabetics. Now I know for a fact there is a huge hole out there for sugar free desserts.Think about it this way,next time you go to a restaurant,or Pastry shop,ask if they have any of their product that is sugar free.The answer you will most likely get is <"We did try making a few ,but they didn't sell,so we stopped making them">.It is as if people who can not eat sugary delights,don"t matter My friends there are literally tens of thousands of Diabetics who crave desserts,just like anyone else.Look at it this way,more then likely every ,one out of five going in a place of business is Diabetic,or are borderline already.I would like to see many more recipes that are sugar free and allow many more people enjoy a simple pleasure . One thing I forgot to say about making Ricotta with vinegar,which I have made in the past it has a vinegar taste,sort of like cottage cheese,and I have made it with lemon juice.

Homemade Ricotta Cheese

I have a easier way to make really good ricotta. One gallon of whole milk,and one quart of fresh buttermilk<needed for the acid>.Place both milk and buttermilk into a sterilized pot heat on high and stir .Cook until milk reaches 180 degrees.and remove immediately.Allow to cool 30 minutes.Yield approximately 3-4 lbs. of fresh ricotta.< Cream can also be added,or half and half before cooking for a richer ricotta.> You will love this easy way to make this wonderful cheese,and it makes up so fast. How to Make Coleslaw

The only comment I can think of is the dressing ,the best to me is very simple .Mayonnaise,white vinegar,milk,and either sugar or if you are diabetic use Splenda or some other sweetener,a little salt and pepper.Mix and taste to your liking.

I have made this several times,but I make it with black olives and tuna packed in olive oil preferably Italian tuna<it can also be made with sardines.And yes it is better if it is allowed to sit over night or at least 5-6 hours in the fridge

Secrets for Great Meatballs

I make my meatballs with ,beef and ground sausage&lt;1.5 lbs. ea.,Two eggs,at least one cup of Locatelli or parmesan cheese.two to three slices of white bread with crust removed,soaked in half and half.salt pepper to taste,,and the key ingredient is sweet Marjoram three to four tablespoons.Mix all together and form a small patty.Fry it and see if the seasonings are correct These are delicious.A simpler way is to bake them in the oven@ 350 degrees for 40 45 minutes.
