On the island of Cebu, Philippines at a small beach-side food stand that was nothing more than a thatched roof lean-to covering an open flame pit used for grilling. It was the freshest seafood which was harvested from the ocean as I waited. There was no need to order because there wasn't a menu, anything that was caught was the menu. What an experience, everything I ate had a clean, natural ocean flavor, lightly seasoned with a slight smokiness from the wood, and served on a banana leaves. Conch, shrimp, fish, and seaweed, served with Pancit noodles and steamed rice. I wasn't at a tourist stop, so it was just me and my Filipino friend (soon to be my wife) savoring the local foods and lounging on the beautiful white-sand beach. I didn't want to leave, so I kept on eating. What a day and what a memory.
