Attend cooking school and have time to tend to my own organic livestock farm (pigs, cattle, poultry, lamb, etc..)

Don't have any "go-to" dishes--always try something new!!!
My favorite comfort food:
Argentinian empanadas with chimichurri sauce, standing rib roast, bone-in ribeyes grilled medium-rare, any braised or slow-cooked meat, particularly smoked meats; a truly great grilled hamburger (made from fresh, home-ground meat), corn pudding, well-done french fries with rich brown gravy, pate de foie gras, Spanish Iberian and Serrano hams and Italian prosciutto from San Daniele (and perhaps a side of cholesterol-lowering medication!!!)
