Dinner in Ashland, any recommendations?

There is a new spot called t's. Fabulous flavors, creative, great atmosphere. Not so good if you are looking for vegetarian fare. The chocolate melt cake rivals Pasta Piatti's.

Best Beignet and other local foods

Hello. I'm in Nola visiting without my friend who would know where to go for all the best local real food.
So, is Cafe du Monde really the best place for a beignet? Other suggestions?

And--how about flavorful, juicy soul food? Cajun? The places that I would never find if it weren't for locals who also like real food.

Vegetarian Nashville?

Thanks everyone for the help. You were right, the Opryland options were terrible. I actually found the food in general there to be very uninspiring, stale, expensive and hot food that comes cold. Unfortunately I did not have much time to explore downtown on my own, but did have quite an experience taking a big bite into some fried zucchini which turned out to be fried pickles! None of you warned me about that.

If you are ever in Southern Oregon, I'll return the advice favor.
