Thomas Keller's Fried Chicken

Not to be picky, but, the recipe in the book calls for 24 bay leaves, not 12, and, 1 head of garlic, halved at the equator, not 1 clove. Otherwise the brine ingredients are spot on.

HAMILTON HAS A NEW PIZZA KING - PIZZA NA ROMA

2 of the last 3 times I've ordered from NaRoma the pizza has been sub-par. I usually get the Arugula and rather than cherry tomatoes, I have received diced tomatoes thrown in with some cherries. Even some of the cherry tomatoes had an off-putting taste.

I wonder if anyone else has experienced this decline. I'm not sure if it's just an off day, or , maybe they ran out of cherry tomatoes, or he picked some bad ones at the Market, etc.

I'm hoping it's just a glitch and there isn't something else going on. Since I found their pizza, I haven't been able to think about ordering from another pizza place. Maybe I just got spoiled from the first 20 or so orders that were absolute perfection.

Since inquiring about this place back in June, I've eaten at least a dozen pizzas from NaRoma. EVERY SINGLE ONE has been cooked to perfection. Their consistency to this point has been absolutely insane. Quality, fresh ingredients. They pay attention to detail. Without question the best pizza I've had in Hamilton.

Definitely prefer ribfest to swiss chalet LOL. Not sure I'm qualified to answer the acrid/twang question. I just remember it being an overpowerful flavor for me, one I had never experienced before (not a BBQ expert by any means). Again, it could have been an off night for them because I've enjoyed their food on several other occasions.

Have you ever tried Hillbilly Heaven's pulled pork (on Upper James)? I'm just trying to draw from my other experiences to give you a better idea. IMO that is almost the perfect amount of smokey flavor, for my taste buds anyway. You can tell it's there, but, it's not punching you in the face. I haven't had much luck with their other bbq items, but, I love their pulled pork.

Been there a couple times (including tonight). Don't get me wrong, the food is good...people do not line up and wait outside for restaurants if the food is crap. But, I did not like the ribs. The smoke flavor was way too overpowering for my taste. Disappointed in that respect, perhaps it was an off night for the ribs.

Love the brisket...very tasty. Have had the sliders, recommend those as well. Coney fries, regular fries..both solid. Milkshakes...delicious. I might get something thrown at me for this, but, I'm not a huge fan of the sneaky cheese. It is good, but, I think they put too much of it on my burger. Maybe it's a texture thing with me, but, I didn't find a giant glob of it very appetizing...but, I ate the whole sandwich anyway lol.

I'll be back on a Mon-Wed to try the fried chicken...looking forward to that.

What's the verdict? The pics from their facebook page look delicious. I couldn't find a menu for them, but, I did find their website. Looks like it is under construction as there is next to nothing on the page.

Ragu bolognese - question

The book I have of hers says to add the wine and let evaporate before adding the milk. I've also read it the other way around. I did wine, then, milk....it's been simmering for 3 1/2 hours and I don't know what to think. It tastes pretty good, but, I'm by no means floored. There is a thin layer of grease/fat that I'm not sure is supposed to be there. Followed the recipe to a T, other than multiplying everything x's 3 for a triple batch.

Frozen Bread Rolls

Sorry to bump an old post, but, why is it so difficult to find frozen dinner rolls in Canada? I am originally from the U.S.....is it like taboo in Canada to have frozen rolls? lol.

Currently living in Hamilton and there is no Loblaws here that I am aware of. Would really like the Rhodes brand, but, at this point I just want some frozen dinner rolls!

Are you supposed to remove the garlic before moving to step 2? I've always left it in, but, I am a newb in the kitchen.

Good restos in Hamilton (updates, please!)

New to the site...I've learned two things already.

1. Chomsky hates Hamilton
2. There are a ton of local places I need to check out.

I've heard good things about Black Forest, La Spaghett and Shakespeare's and those 3 are on the "immediate list" of places to go. I immigrated to Hamilton from the US a couple years ago and I don't get out to eat to often. When I do, it's usually the Keg. The atmosphere isn't great but I've never had a bad steak at the one on Upper James. There's also a little pub on James St. North that I go to occasionally called Fisher's (Pier 4). Friendly staff, especially Danielle! The owner is also very nice and the food is good IMO. Just your average pub fare I suppose, but, I've never had a bad meal there either. Maybe most people think it's crap cause I didn't see it mentioned lol, but, I always enjoy it. :)

I always get my deli meat from Denningers on King St...great selection and always tasty. I've had their schnitzel a couple times as take-out and never cared for it too much. Always seems to be dry and not much flavor. Nowhere near as good as my girlfriend's Oma's. :-)
