What are the uses for specialty salts? And what are the differences between common salts?

I too use kosher and sea salts after years of using iodized salt. I recently have been prescribed by my doctor to take thyroid medication. I was amazed to find out how many people are taking this medication. I wonder if it is because we are not using IODIZED salts as much as we did in the past! I am introducing iodized salt back into my family's diet again and I'll use the "designer" salts occasionally.

Oven Roasted Tomatoes

I have wanted to try roasting tomatoes but not sure how to start. The three hours seems soooo long. Do you think if the oven temperature was higher it would take less time? Most veggies are roasted at high temps.

Cook the pasta separately and add to the soup just before you are ready to eat.otherwise the pasta gets too mushy if left in the soup when you plan to eat the day after.

Best and Worst Cooking Shows

My favorite was watching Julia Child (guess I'm giving my age away). She was the best and the first to teach us everything about cooking. I enjoy the Barefoot Contessa and a good show on PBS. is Ciao Italia with MaryAnn Esposito. I'm still looking for the cooks of yesteryear who cooked real food such as Julia and the Galloping Gourmet.

Low Cholesterol Boiled Egg Breakfasts

Egg white omelets can be very tasty and you can add veggies, or canadian bacon, mushrooms, whatever pleases your taste bud. Scramble the egg whites with a dash of salt and pepper. Add chopped cilantro or fresh parsley. In a non-stick pan, heat chopped canadian bacon (1 Tbs.) pour in egg whites and cook as you do for an omelet.Serve with salsa. Hardboiled egg whites with Smart Balance mayo mixed with a dash of mustard. Serve in a crisp lettuce leaf.

Making Vegetable Broth and Soup?

Since the vegetables are very tender, I would puree the veggies and have a rich tasting broth. A hand blender works very well. Can be blended right in the same pot.

Potluck Dinner Party Help?

Nothing holds up as well as a pot of chili. You can make it vegetarian, or with meat, or meat and beans. There are many good packaged mixes for chili on the sauce/gravy shelves in the grocery store. Just follow the directions, even add a little touch of your own seasonings and it's bound to be a hit.

Cannellini bean works well if you plan to puree a small portion. It is a meatier bean and will render more flavor once pureed.

How to give beef stew more punch?

I found adding a package of seasoning for beef stew; McCormick makes one especially for slow cookers, gives the stew that added flavoring. Also, I always add a bay leaf .
