Pampered Chef

I went to a party and got a set of breading trays for around $ 20. They are
pretty useful and snap together to use. One tray each for the flour, eggs and
breadrumbs. breaks down for storage and easy to clean. I use it every time
I need to bread something,

Try Micheal Angello's in North Arlington. Located on Ridge Road you
will not be disapointed. Every dish I have tried is very good. They have
a thin crust square pie that is incredible.

Sunday Breakfast near Wall Street?

Try The Kichenette @ 156 Chambers St. (between Hudson & Broadway). Not far from
Wall Street in Tribeca. You can even walk. It opens at 9 am on Sundays and has incredible breakfast . Everything I ever had has been good to great. Check out their
website for the menu. It is truley one of the best bargains around.

What do you make that is SOOO easy yet you impress yourself every time you make it?

I spray the bottom part of a broiler pan with oil than lay down a single layer of red potatoes sliced about 1/4" thick. Season with salt & pepper. Then put the top part of
the pan over the potato slices. Spray the pan with oil and place chicken thighs skin side up directly over the slots so the drippings will flavor the potatoes. Put this in a preheated
350 oven and cook between 1 1/2 - 2 hours .

I usually season the thighs with Adobo and Goya Sazon. But any seasonings you like will work. It is best the season the meat in advance (overnight) . The fat in the thighs renders down and crisps the potatoes. I find that 2 hours works best. They will not dry out.

Transfer the thighs to a platter to rest. Remove the flat pan top and scoop up the potatoes ( a spatula works best) The chicken is crispy and so so tender. Also the potatoes are some of the best you ever had.

This is a very simple dish that requires little effort, except cleanup. But it is worth it.

Micheal Angelos - North Arlington

This BYOB has an incredible brick oven , thin crust square pie. Also the rest
of the menu is great. I have been there 15 times and never had a bad dish.
My favorites are: Hotsy Totsy Shrimp, pork chop giambotta, long hot peppers.
and the fusilli with sausage. The portions are huge and only one dish on the
menu was priced over $ 20. Definetly worth a try !

Try Il Giglio @ 81 Warren Street. Very good Italian food with a great ambience. Could be
rather expensive depending what you order. But this is very close to your hotel.

Another very good Grilled dog is from Boulevard Drinks located in Jersey City. They
have been around over 50 years. I am lucky enough to work just a block away and
their dog is alot like Papaya Kings.

These people truley understand the art of preparing hot dogs. Just ask Hotdoglover I think he would agree.

Try Bubbas Dawg House in Lyndhurst. They offer all styles of Hot Dogs and the
will prepare them exactly how you want them (just ask). They also make freshcut french fries from scratch. Their grilled dog is my favorite.

For my 50th birthday I went to Le Bernardin and had the Chef's Tasting Menu with
Wine Pairings. By far the best meal of my life. It is expensive but worth experiencing
at least once in your life.

Need Chicken Recipes

No thighs need to cook that long in order to render out the fat. They are very forgivng
and taste best when cooked well. It is very hard to overcook thighs.

Need Chicken Recipes

Season whole chicken thighs (with skin on the bone). I usually use Adobo along
with Goya sazon. Let sit a few hours best if overnight. Use the Boiler pan from your oven
take off the top part of pan and spray the base with cooking spray. Slice potatoes into
thick slices and line the base with them. Spinkle olive oil over the potatoes and season them with sea salt and fresh cracked pepper. Place the top part of the pan over the potatoes and spay with cooking spray. Place the chicken thighs on the top of the pan.
Spread out so the drippings can go through the slots and baste the potatoes.

Put the whole pan in a 350 degree oven and cook between 1 1/2 to 2 hours. The fat in the thighs will drip into the potatoes underneath. They will be crisp on the outside and soft inside. The chicken skin will be crisp and tasty. Place the thighs on a platter, take
off the pan cover then scoop out the pan roasted potatoes.

This dish never fails ! It is very simple to make and the potatoes are some of the best you ever had. You can change up the seasoning to anything you like. The cleanup is a little messy. but well worth it !!
