*Some* Calphalon (definitely not the stuff you buy in Target - if it's cheap, it's not made here

Homemade Amaretto

Apricot kernels can be toxic in large amounts. (Cyanide poisoning - not exactly fun times.) I don't know what "large amounts" might be, but I'd like to avoid the chance for cyanide poisoning. Could I substitute something for the apricot kernels, or just leave them out?

What do you cook in your microwave?

Boiling water for tea and heating milk for hot chocolate.

I just learned that microwaving broccoli destroys nearly all of the flavonoid antioxidants in it. One thing you might want to keep out of the microwave.

Which box grater?

I just got the OXO grater and I love it. It was one of the top two when Cook's Illustrated reviewed them. The only thing that I didn't like was that I found them at TJ Maxx for $12 a couple of weeks after I bought mine at Bed, Bath, & Beyond for $16 or $17.

The OXO one has a box that attaches to the bottom that keeps all of your gratings contained, has measurements on the side, and has a top so that it can be used for storage. Nice plus.

Ruined enamel on my Creuset

Did you ask Le Creuset about it when they told you they would only give you a coupon? Enameled cast iron is not made as strongly as uncoated, so this is probably not a good idea. You could get a Tramontina for less than 60% of the cost of a new Le Creuset, and they have been known to replace chipped enameled dutch ovens. http://www.thekitchn.com/thekitchn/co...

What's the right size & shape Staub Dutch Oven for me?

I bake my no knead bread in an oval dutch oven, and it works great. (It's an off brand d/o.)

What's the right size & shape Staub Dutch Oven for me?

TJ Max and Marshall's are the same company, so they're often selling the same stuff. I've seen Le Creuset pots at TJ Max recently.

Oven Size

The interior dimensions can vary from brand to brand. You should be able to get the dimensions from the manufacturer's website. Or, if you're going to a showroom to look at them, take the pan with you! If you can afford it, look into getting a convection model.
