Hello, I'm Your Annoying Server

I agree w/ bgkmw. Very rarely or never has 'over friendliness' annoyed me. What does annoy me is condescencion and surliness at high end restaurants, unless it's part of the schtick as it is at Cafe Sport in SF. As a former chef at a high end restaurant in Berkeley I know how hard everyone in food service works and how difficult customers can be. If you're that easily annoyed, cook at home.

As a chef, I have to agree that some posters here should climb down from their lofty perches and get a clue. Since when are we not allowed to be inspired to experiment w/ traditional dishes to create something new?

We'll be there in March, too and there are 2 places we always try to get to. Cowboy Ciao @ 7133 E Stetson Dr, Scottsdale, AZ 85251 (480) 946-3111 and Donovan's Steak & Chop House @ 3101 E Camelback Rd, Phoenix, AZ 85016 (602) 955-3666. Donovan's used to have great free Happy Hour apps too. Not sure if they still do.

Michael Pollan's Food Journal

I don't have a definitive answer because it comes from different sources e.g. lamb from New Zealand. For the most part though their sources are local producers and they distribute to the stores from a central warehouse facility in Monrovia.

Did we get ripped off? Standing rib roast question.

this is a standard prep step for prime rib roast. when i was chefing for my daily bread i roasted 2 whole rib roasts every fri and sat nights at what used to be hawthorne's restaurant (now salute'?)at marina bay in richmond. as previous replies have said it makes service much easier and you don't have a big honkin' rib bone taking up half the plate.

Sourdough on the Endangered List

Most of the 'traditional, old style' sourdoughs like Boudins get there sourness from the addition of vinegar to the dough. That's not my idea of good bread. We are lucky to have many great artisanal bakeries in the bay area that produce delicious sourdoughs by the truly traditional method of starter fermentation w/ natural airborne yeasts. The yeast is what should provide a unique flavor to the bread, not vinegar. The death of great sourdough in SF is greatly exaggerated.

Seafood Paella from Giovanni's Fish Market

Paella made without Calisparra or Arborio rice just isn't paella. Change that and it sounds great.

Tom and Jerry

My first true love and live-in girlfriend was Jerrie D (I'm a Tom) and one of our first purchases together was a set of Tom & Jerry drink mugs & bowl. I haven't made these since then, 35+ years. Great memories.
