I bought a can of Irish Oats-now what?

I do the same make-ahead method for the whole week, but never have had a problem with them inflating. When I zap them in MW, I add frozen berries, so that extra liquid and mass from those may help with the inflating issue. It also makes them super delicious.

What is one tip that you learned about cooking that was simple but made a huge difference? [old]

This is less "pro" than some of the rest appear, but definitely be patient. Whenever I make anything and want it to go faster I either take it out not quite done yet ("done enough"), or turn up the heat to make it go faster (an easy, universal example is grilled cheese sandwiches). I always have to remind myself that most everything is better when I just leave it alone and let it cook (or cool) properly.

"Sweet butter"

For Christmas breakfast I made egg nog French Toast and tried to make fresh whipped cream. The heavy cream I bought was not homogenized (the best kind of dairy products) but that may have been a mistake to try to work with this. I whipped it for less than a minute and it turned instantly into butter....which I had added sugar to already, of course. It was delicious on the French toast, but what else can I use this for? I am thinking of adding cocoa or vanilla and making a buttercream frosting for cupcakes, but after Christmas, we are kind of on sugar detox...any other ideas?

Alter recipes for stand mixer?

I have been lurking on chowhound for a while, and finally have something worth posting (I hope). My awesome husband got me a kitchenaid stand mixer for Christmas, and I can't find any info on if I need to alter my recipes for it. I mostly just bake cookies and started baking cupcakes a while back too...I am planning on baking cookies tomorrow (I have worked every day since Christmas, but am off tomorrow! Woo hoo!) and want to go into this fully prepared. When I started using a hand mixer, there didn't seem to be any issues (going from wooden spoon to mixer), but just want to make sure. I am especially concerned about when I go to make cakes and cupcakes.
