WHEN Chef and owner Michael Cetrulo first opened Scalini, we were regular customers, the food was that excellent, nary a mistake......since he opened Scalini in NYC where he spends most of his time, the "help" he broke in in the kitchen really don't know what their doing......
that's what many Chefs do today, they teach the low paid staff in the kitchen to duplicate dishes on the menu and the customers suffer for it.....this happens very often, and is becoming more prevalent in the industry.......If you know a Chef who owns a restaurant, ask who's in the kitchen,.....many times their in the dining room schmoozing with the customers....who's behind the stove ???

EMMA'S IN CRANFORD has the best pizza IMO........I had their delicious Spaghetti Bolonese
and asked for "Al dente" and it came out exactly that

Barth's Market
As a long time "connoisseur"" of smoked meats, remembering the original great Gaisers in Union, and others, my taste for franks and cold cuts is clearly the Union Pork Store, Barths is very good, but for my taste, not as assertive enough as Union, Barths being on the mild side and I mentioned this once to the owner Jimmy, and he said his customers prefer milder meats....John's in Scotch Plains, is just plain expensive....the "prime" beef at Costco is just as tasty IMO as John's "prime"....only almost half the price per pound....."Stecks" , an old time, long time deli at the Somerville circle sells Kotchers, for $6.99 a pound, and when asked who made their franks, the guy behind the counter replied .........Kotchers

Also I must include the Bridgwater Diner on Rt. 22 middle island in Bridgewater,....caring management, making sure everything is to your taste,.....I heard from an employee recently that the Stirling Diner has been sold to a Korean........

ANYHONY'S COAL FIRED PIZZA-EDISON
Their coal roasted ribs are great as are the chicken wings......both meaty and delicious, the pizza is ok IMO....both ribs and wings are without the usual gooey tomato based sauce, which makes for a different and delicious experience........they also have a bar.

Best diners in NJ
Been to many many diners in NJ for the last 50 years and my favorite now is the Stirling Diner & seafood pavilion in Stirling on Valley road....am their at least once a week and always for Sunday breakfast, the kitchen takes particular care on how the customer wants their food prepared,....not many diners do.......well prepared fresh and tasty.....

I stopped going to Harolds, and other deli's since I tasted the corned beef and pastrami at Goodmans in Berkeley Heights,.... since the new owner took over he has improved the menu
considerably and it shows with the increased business
Emma's Brick Oven Pizza
I am 76 and been eating pizza for most of those years including Granma's home made, and Emma's is my GO-TO pizza place,... what separates their pie from most others is that they use San Marzano tomatos (more expensive) cook them properly, the highest quality mozzarella cheese and the brick oven finishes an excellent pie, a lil' more expensive than your ordinary "cookie cutter'" type pizza but worth the trip

After hearing from a long time Chef,.....he said many of the shrimp that restaurants serve, particularly Asian
are from unclean waters from southeast Asia.....known in the trade as "sewer shrimp"...but because of their low cost, and the tight margins restaurants are working with today, it could become a hazard to the public,....my question,......is it proper to ask management WHERE the shrimp they serve, comes from ?

Flourgirl.......I'm not saying someone is wrong if they enjoy fine trappings, but my main concern is the food,.....I can't eat ambiance....but if that is what some people prefer, nothing wrong with that.

Quality of food, yes, portions are subjective, in my 50+ years of dining in restaurants, I've seen small portions considered "large" by some, and large portions, considered small by others....as far as overhead, that, is the owners concern, should not be the customers
the customer, like the owner, is entitled to a "profit" also, and the customers "profit" is VALUE and SATISFACTION !....if the customer gets neither, they "lost" money while the owner has made a profit on that meal........agreed ?

This is what happens when an upscale restaurant gets rave reviews from reviewers who's taste is no better than yours or mine.....the owner/chef start to walk "on air",...thinking their restaurant is above it all and feel like anything they present should not be held to scrutiny or evalued because they are "the best". and what does a customer know compared to their expertise .......

It happens....depending on the new restaurant the chef is hired.......he has to abide by the dictates of the owner, and by that, the food sometimes suffers.....for the prices the Pluckemin charge's, and the miniscule portions they present,......they have to be on top of their game quality wise.
Where to Find Pork Belly in Union County
Chinese supermarkets carry cuts of pork one usually won't find in a supermarket, including your request,...I buy chicken feet in their markets because they add so much flavor to chicken soup.....if you don't think you'll like eating them, add them to your chicken soup,..you'll taste the improved difference......Wonder Seafood in Edison, which I consider one of the finest chinese restaurants in the state has pork belly on it's menu and it is succulent and delicious......

I agree.....had a similar experience just last week, ....tasteless soup, tasteless steak, but the salad was outstanding......and it makes me laugh when I read the restaurant reviewers give the highest accolades just because the ambiance is appealing, and the "reputation" the business alledgedly has.....that, and the high prices that accompany the deceitfully small portions in oversized plates, which to me, is deceitful to the customer........

Applecheeks.......the area by Bragmans is not safe,. not safe at all......I went a few years ago and it was eeirily quiet.......got my sandwiches and scooted out of their asap....last year 2 were shot within distance to Bragmans in daylight !!.....I would love to go there especially since you rated their pastrami,but very risky.....no ?
New Jersey's best burgers: Where Are They Now?
YA' KNOW......the beef business has dumbed down the masses into believing what their tasting in steaks, hamburgers are the real thing.......in the last 40 years or so the meat industry has made the consumer think that the cattle their raising is the best ever !!.....WRONG !!.....today's beef is bred and raised to produce juicy steaks and hamburgers with NO TASTE !!, and to know this one has to recall the tastes of yesteryear,....when beef was a lil tougher but had a great beefy taste, and when you went into prime, it was marbled, tender juicy and BEEF TASTY !!
steakhouses delude their customers about "prime".....prime today was "choice" yesterday
......I mentioned the above to a long time master butcher and he agreed wholeheartedly.
it's all about selling a deception to the beef eating public.......occasionally one may come across
a beefy tasting cut of meat but that's rare, no pun intended.......my favorite hamburger with the ol' time taste is Omaha Steaks hamburgers,......expensive, but worth it.

A "high end" restaurant packed on a Saturday night does not denote that business is thriving......it's the other 5 or 6 nights that count, and the high prices and small portions that keep them in business longer, the public finally weary's of them and they opt for better value for their dollar, especially in this economy, ......see Ryland Inn and many many others like it,......all closed

The Dog House
My second visit to the Dog House provided mixed results......the dog was juicy and fresh,
this time the corned beef was sliced by machine thin, tossed on a griddle and served on pechters rye bread........I threw half the sandwich away, bread was soggy, (soaked) the corn beef, tasteless and red hot, not like Harolds, or hobby's etc......I may go back for the dog and nothing else...
