Sure....I'll add a tablespoon or two, depending on the batch size I'm making. I'm also prone to dropping in a quarter of a white onion (more prevalent in Mexican cooking) into the processor & a squeeze of lime . If it gets to thick add a little more soaking water.

Turned out well....although, never having had KT sauce I have nothing to compare it to. If this is very similar it's like a lot of others out there from Rick Bayless, D Kennedy and even Emiril has a decent jalapeno hot sauce in one of his books. I used 6 allspice berries along with the 6 whole coves following Empowers88 recipe. I'm sure some of the early posted versions of this sauce was good enough for many that followed this thread, as they have not been seen or heard from lately. Fun to tinker with these though & definitely a 'sauce', not a salsa type consistency.....Willie

How simpler can it get? I'll give this a whirl but thinking it will already be a component of a future Taco Night. Truthfully, the other recipes, while having a few different ingredients, are very, very close to the sauce made by Bayless (IMO) and years ago I experimented with a Arbol only hot sauce that was also very close. Clean, stem, soak, add some onion & lime juice, pulverize and strain the Arbols....will flat light you up

That was my immediate question. I made a batch of Empowers sauce about 2 weeks ago and it was OK....not great, not mind blowing.....just a very decent taco sauce. I did use some Allspice berries (6) and ground them up at the end and ran all through a food mill for consistency.

I've had mustard (Frenches) years ago with this added and it was pretty HOT stuff. I was told the person got it at a pharmacy but here it is on Amazon, with reviews. think he means capisum? which encompasses most peppers per the Net. And, yes, looking up pimiento dulce brings you to allspice. One note of possible interest is pimiento dulce Malagueta combines flavors of cloves, cinnamon & nutmeg. Perhaps where the underlying flavor of clove comes from?

Thanks for this well thought out posting. As things turn out I did not make the batch using Valentina so will def give this version a whirl, hopefully this weekend, and report back. I bought the black Valentina so, with luck, can do both versions for a comparison. Your version makes sense in as much that this could be quickly thrown together in the back of a moving taco wagon & all ingredients readily available. Regards....Willie

So....good to hear Empowers salsa is legit. I had good intentions to make it last week but was in the process of a household move so nothing 'fun' got done. Any other delish postings on salsa's, green perhaps, to keep this thread alive? Most posters seem to have gotten involved elsewhere.....

Sounds good. I used the Knorr cubes, just 1. I've made similar sauces in the past using a combo of Arbols & other dried chilis for flavor (not heat) with good results. Very basic..chilis soaked in hot water, most seeds removed, some fresh onion & garlic, squeeze of lime, dash of salt and a handful of cilantro. Blended very well using the soaking water as needed & strained. Will flat light you up...to hot for some though.

I believe a few on here may know 'of' him from conversations they have had with him. I read one older post from someone who 'thought' he may have been involved in a bad car accident. Not sure if that is true. Seems none of the early posters involved in the hunt post anymore. I have saved your version & hope to make this weekend. Sounds very tasty. I lived in L.A. for years & never had KT. Now in the PNW....a challenge to find decent ethnic chow of any kind.

No, none yet. Thought I saw a post about Redmeat being in an accident but not sure. Empowers recipe below looks very well worth a try. I'm in the PNW so doubt I can find hab paste, even in the Hispanic markets, but I'll look. I tend to forget about this until I get an posting update by email. Think I'll make a list of Empowers ingredients & crank out a batch at work this weekend.....Willie

Well, he does run a restaurant I believe so might be caught up in that. I've been following this for a coupla years and there were times it would lag some. I'm thinking there might not be more posts from RM so might I suggest making the last posted update of the salsa and posting how you feel about it, noting any tweaks you make. That will at least keep the thread alive to those that follow it....

Just found this site and browsing this topic re-ignited my hot sauce interest. Can't believe after all the years I lived in Calif I never ate at KT. In the NW now but this topic brings to mind the joint I used to frequent in Santa Barbara on the Mesa called Cuca's I believe. They had terrif burritos, huge, with squeeze bottles of red & green hot sauce on each table that was excellent. I'd alternate squeezes of each before taking a manly bite. Anybody here ever frequent there?? Tips on their salsa's? Off to work in the kitchen...wishing all a Merry Christmas..
